Keto Lemony Chicken + Broccoli Skillet Meal 🌞🙋‍♀🍋

4 boneless, skinless chicken breasts
large head broccoli, broken into florets
1 Tbsp avocado, or olive oil
sea salt and fresh ground black pepper, to your taste
1 tsp chili flakes
2 Tbsps capers
1 cup chicken broth
1/4 cup fresh squeezed lemon juice
3 cloves fresh garlic, minced or pressed
fresh lemon slices to garnish (optional)

Instructions:
Heat oil in a large skillet over medium-high heat. Season the chicken with sea salt, pepper and chili flakes and rub it on both sides.
Cook chicken on the skillet for about 3-4 minutes per side or until golden brown. Remove and set aside.
Add in the chicken broth, lemon juice, capers, and garlic to the skillet. Stir and scrape up the brown bits from the bottom of the pan.
Add in broccoli, then nestle in the chicken back to the skillet.
Simmer for about 10 minutes, until broccoli is bright green and tender-crisp and chicken is cooked through.
Garnish with lemon slices and enjoy!

January 27th I stopped drinking diet Mountain Dew’s or any soft drinks and I stopped eating sugar and carbs.  I am making mistakes along the way as I am learning, but this is HUGE progress for me.  I have never been an overeater nor one to eat tons of junk food.  But,  I’m sedentary after work (too exhausted to move) and my usual one meal per day was eaten and then bedtime.  Also, for my autoimmune disease, I’m  on steroids and Remicade, which has the unfortunate side effect of weight gain.  It’s been a gradual increase over time.  Adding close to 10 lbs eating my way across Europe didn’t help either. 😳  And of course, 8 months ago I quit smoking, so that added a few more pounds.  Bottom line, I was starting to hate myself.  And that’s never a good sign. 
But, almost a month ago, after a chat with a friend, something clicked and I went cold turkey.  I already feel better and am excited to continue to get healthy. 📋 INGREDIENTS:
Dough:
1 1/2 cup shredded mozzarella cheese
4 oz cream cheese
1 tsp baking powder
3/4 cup almond flour
1 tsp salt
2 tbsp sugar replacement
1 egg
Filling:
1/4 cup water
6-7 drops of concentrated cinnamon roll flavor
4 tbsp ground cinnamon
1/4 cup brown sugar replacement
2 tbsp butter
Icing:
4 oz cream cheese
4 tbsp butter
1/4 cup confectioners sugar replacement
5 drops vanilla frosting flavor 👨🏽‍🍳 INSTRUCTIONS:
1. Preheat oven to 375 degrees and grease a pie pan with butter.
2. In small pan over medium heat, melt the mozzarella cheese and cream cheese together until well combined and fully melted. Add egg and mix.
3. Mix flour and baking powder together then add the flour to melted cheese and mix until combined, add salt and sugar replacement.
4. Mix into a dough ball, you may need to use your hands so put some coconut flour on so it doesn’t stick to your fingers and form a ball.

1. Melt the butter and cream cheese in microwave safe bowl and then add the rest of ingredients and mix well.
2. Once they are done in the oven, lather them with the icing and enjoy!

Dinner tonight was Chicken Lasagna! It was easily a 10/10 and everyone even wanted seconds! Not only that, but it literally took less than 5 minutes to put together and only cooks for 12. Definitely a new menu item for our rotation!
