1. Soft boiled eggs topped with trader Joe’s chile lime seasoning and black sesame seeds. To make these, i boil in water for 6.5 minutes and immediately put into an icebath. For a firmer yolk, go for 7-8 minutes.

2. Sliced avocado. I gotta have the 🥑🥑 or its not breakfast.

3. Crumbled Bulgarian feta.

4. Sliced cherry tomatoes.

5. Walnuts. There’s just something special about walnuts and feta and tomatoes together. That’s the persian in me.

6. Somewhere below all of this deliciousness, some leftover mushrooms from dinner last night.

Made some mini tuna sandwiches! I used my pizza dough for the buns! I’ve never topped with everything but the bagel seasoning before on my dough and it turned out great. I mixed my tuna with mayo, salt and pepper and a smidge of sweet relish and then used white American cheese to give it a tuna melt feel. ⁠

1/4 cup Fresh crumbled cheddar cheese⁠

Keto Chili Lime Shrimp Wraps 🌞🌶🥑
-
1.5 lb. raw shrimp, peeled and deveined
2 tsp ground cumin
1 tsp smoked paprika
2 cloves fresh garlic, minced
2 Tbsp avocado oil, or extra-virgin olive oil, divided in half
sea salt and fresh ground black pepper
freshly ground black pepper
2 fresh limes
a handful of fresh cilantro leaves, chopped
8-10 romaine or butter lettuce leaves, rinsed and pat dried
1 large avocado, diced
1 red chili, thinly sliced
In a large glass bowl, add shrimp, all seasonings, juice of 1 lime, garlic, and 1 Tablespoon of oil.

Season with sea salt and pepper to your taste, then stir well to coat.
If time allows, refrigerate/marinate for 15 minutes or so, covered.

Heat oil in a large skillet over medium heat. Add shrimp and cook until just pink, about 3-4 minutes

In a very large bowl add cooked shrimp, diced avocado, cilantro, chili slices, juice of 1 lime and remaining oil.
Gently stir to combine.
Taste test and season with a pinch of sea salt and pepper of needed.

Add spoonfuls of the avocado shrimp mixture lettuce leaves as shown, and enjoy. ❤

📖 Ingredients
5 cups cauliflower florets (about 1 pound)
1 cup shredded sharp Cheddar cheese
Lucerne Natural 
Sharp Cheddar Cheese 32 Oz
1 large egg, lightly beaten
⅛ teaspoon salt
McCormick Sea Salt 
Grinder 2.12 Oz

Instructions 
Preheat oven to 425°F. Line a large baking sheet with parchment paper. Place cauliflower in a food processor. Process until finely grated. Transfer to a microwave-safe bowl. Cover loosely and microwave on High for 3 minutes. Let cool slightly. Transfer the cauliflower to a clean kitchen towel and wring out excess moisture. Return to the bowl and stir in Cheddar, egg and salt until thoroughly combined. Place a 3-inch biscuit cutter on the prepared baking sheet. Fill the cutter with about ¼ cup of the batter, patting down slightly in the mold. Repeat with the remaining batter, leaving about 1 inch between each one, until you have 8 "muffins." Bake until browned and crispy around the edges, about 25 minutes. Serve with your favorite toppings or use to make a breakfast sandwich.
