Veggie Sambar👌Be sure to have a foodgasm with this one... Your tongue will never lie 😋
*1/2 tsp cayenne pepper
*1 tbsp garam masala
*120g fine green beans
*2 tsp mustard seeds
*1 vegetable stock cube
*1/2 tsp ground turmeric
*1 garlic clove
*A thumb sized of grated ginger
*400g red lentils
*Handful of coriander
* Peel and roughly chop onion and fry on a medium heat, with a splash of oil. 4 - 5 mins.
* While the onion is softening, chop tomatoes and green beans roughly.
*Add garam masala, mustard seeds, turmeric and cayenne pepper, garlic and ginger to onions. Cool for 1 - 2 mins. (add a splash of oil if looking a bit dry)
*Add lentils, stock (dissolved in 600ml of water) and lime juice to pan with onions. Mix it all up.
*Add green beans and tomatoes to pan. Cook for 15-20 mins, stirring occasionally, until all tender. (keep checking as it may need more water, if looking a bit dry)
*Add Handful of coriander in the Sambar.
*Serve over rice and add a dollop of coconut yoghurt, if you like. - 2 days ago
