Quick Lentil Curry 💛🧡🌱❤️💚
Gets ready in under 30 minutes, perfect for a vegan & gluten free middle of the week supper. Love plant based food 🌱

1 cup washed red lentil
2 cups Vegetables (roughly chopped)
2 tbsp oil
1 onion chopped
1 tomato chopped
Spices - Cumin, black pepper and Turmeric powder 
Salt to taste
2 tbsp Coriander leaves chopped

STEP 1: Heat oil in a pan, add onions and sauté for 2 minutes on medium heat. 
STEP 2: Add spices and tomato in the onions, mix well and add washed lentil along with the vegetables. Combine it all nicely, season with salt and add 3 cups water to it. Cover the lid and cook on low heat for 15-20 minutes.
Sprinkle with coriander leaves , serve with steamed rice or any flat bread of your choice! 👍🏻🤩 👉🏻This is my go-to quick and easy meal after a hectic day at work, so quick and tasty 😍 I love lentil ❤️🧡💛
👉🏻I have used only carrots and potatoes, you can add green peas and beans too or how about squash💚🤩👍🏻

Creamy Golden Lentil Thai Coconut Curry by Nisha @cookingforpeanuts ♥️

Recipe: In 2 tbsp neutral oil (or some veggie broth), sauté 1 large diced yellow onion and 1 sweet potato (peeled and cut into approximately 1/2 inch pieces). Cook until onions turn translucent, about 7 minutes. Add 3 minced garlic cloves and 1 tbsp minced ginger and sauté another 30 seconds. Mix in 2 tbsp vegan Thai red curry paste, 1 tbsp low-sodium tamari or soy sauce and 1-15oz can coconut milk. Bring to a boil before reducing heat and simmer (covered) until sweet potato softens, about 20 minutes. Transfer to blender and blend until smooth.

Return curry to saucepan and add 1-1/2 cups dried golden/yellow lentils (or sub with red lentils) and about 2 cups low-sodium vegetable broth. Mix well. Bring to a boil before reducing heat and simmer on low until lentils are cooked, about 7-10 minutes. Stir frequently and add more broth and/or water as needed. (Check lentil cooking time on packet.) Once lentils are done, mix in 2 tbsp fresh lime juice (or rice vinegar) and salt to taste. Serve with chopped fresh basil.

Ako želite pojesti ukusan, a brzo pripremljen obrok, ova varijanta leće u curry umaku idealna je za vas.😁 Već uz nekoliko sastojaka kao što su kokosovo mlijeko, curry, povrće i leća možete pripremiti umak koji će vašem ručku dati novi, kreativan touch.👌 Sastojci:
1/2 šalice crvene leće @tvornica_zdrave_hrane
1/2 šalice basmati riže @tvornica_zdrave_hrane
1/2 bijelog luka
4 češnja češnjaka
1 mladi luk
1 konzerva kokosovog mlijeka @tvornica_zdrave_hrane 
1 žlica kokosovog šećera @tvornica_zdrave_hrane 
Sok od polovice limuna
Sol
Papar
Chilli
Curry
Kumin
Maslinovo ulje

Priprema:
Skuhajte leću, a u drugoj zdjeli rižu.
Na malo maslinovog ulja zažutite luk, mladi luk i češnjak pa dodajte sve začine i kokosovo mlijeko.
Umiješajte leću, maknite s vatre i prelijte sokom limuna.
Gotov umak poslužite uz kuhanu rižu.

Čeka vas zdrav i lagan obrok, kojeg možete napraviti bilo gdje i bilo kad!😁 🇬🇧 Ingredients:
1/2 cup of red lentils
1/2 cup of basmati rice
1/2 of onion
4 cloves of garlic
1 can of coconut milk
1 tbsp of coconut sugar
Juice of half a lemon
Salt
Pepper
Chilli powder
Curry
Cumin
Olive oil

Preparation:
Cook the lentils and in the other bowl cook rice.
Sautee the onion and garlic with a little olive oil, then add all the spices and coconut milk.
Stir in the lentils, remove from heat and pour over the lemon juice.
Serve the sauce with rice.

⏩ Simple mushroom, potato, and veg lentil curry. Substitute as you want with aubergine, courgette, etc.

🌿 Prep your vegetables. Carrots, peppers, onions, green beans, mushrooms...
.
🌿Boil, cut, and dice some potatoes. Drain and set aside. Steam some cauliflower florets and set aside as well.
.
🌿 Sauté chopped onions and mushrooms till translucent. Add spices here. I used garlic ABUNDANTLY 😅 and mixed herbs. . 🌿 Pour in a cup of lentils (I used half a cup red lentils and half cup mung beans. It depends how thick you want your sauce to be, but you can always adjust with water and spice levels). Cook with the mushrooms, onions, and some tomato paste for 5 minutes on low heat. .
🌿 Pour in some hot water till it’s a little soupy but not too much. The lentils will absorb the water during cooking so you might have to add more. Cook for about 20 minutes until the lentils start to lose their bite.

🌿 Add the boiled potatoes and steamed cauliflower and continue cooking on low heat for 5 minutes until incorporated. .
🌿 Lastly, add the remaining vegetables (carrots, peppers, and green beans). Cook for a further minute. .

Veggie Sambar👌Be sure to have a foodgasm with this one... Your tongue will never lie 😋⁣

(Serves 2) ⁣
Ingrediants⁣
⁣
*1 onion⁣
*2 tomatoes⁣
*1/2 tsp cayenne pepper⁣
*1 tbsp garam masala⁣
*120g fine green beans⁣
*2 tsp mustard seeds⁣
*1 vegetable stock cube⁣
*1/2 tsp ground turmeric⁣
*Lime juice⁣
*1 garlic clove⁣
*A thumb sized of grated ginger⁣
*400g red lentils⁣
*Handful of coriander⁣
⁣
Garnish (optional) ⁣
*Coconut yoghurt⁣
⁣
Method⁣
⁣
* Peel and roughly chop onion and fry on a medium heat, with a splash of oil. 4 - 5 mins. ⁣
* While the onion is softening, chop tomatoes and green beans roughly. ⁣
*Add garam masala, mustard seeds, turmeric and cayenne pepper, garlic and ginger to onions. Cool for 1 - 2 mins. (add a splash of oil if looking a bit dry) ⁣
*Add lentils, stock (dissolved in 600ml of water) and lime juice to pan with onions. Mix it all up. ⁣
*Add green beans and tomatoes to pan. Cook for 15-20 mins, stirring occasionally, until all tender. (keep checking as it may need more water, if looking a bit dry) ⁣
*Add Handful of coriander in the Sambar.⁣
*Serve over rice and add a dollop of coconut yoghurt, if you like.
