Warm cumin roasted carrot & lentil salad. 🥕🥬
Light, warming & fragrant.
Using a @deliciouslyella but with added roasted butternut squash and rocket.
•Carrots & onions & small cubes of butternut squash roasted in cumin seeds, fennel seeds and a glug of oil for 30 minutes.
•Heat tinned green lentils through in a pan and add the roasted vegetables, roasted pine nuts. •Once cooled add rocket & a squeeze of lemon.
I served this with a herb crusted rack of lamb.
The salad can be boxed up and served cold for lunches and still tastes perfect!!!!! - 21 minutes ago
