Recipe:
.
Ingredients
1/2 tbsp oil
1 small onion diced
4 garlic cloves minced
1 1/2 tsp Italian seasoning
1 tsp onion powder
1/2 tsp paprika
1 1/4 tsp sea salt or less/more to taste
 Black pepper to taste
1/2 cup (105 g) dry red lentils
5 cups (1200 ml) water or vegetable broth
1/2 cup (120 ml) plant-based milk or cream
1/2 cup (120 ml) tomato sauce (passata)
1 tbsp tomato paste
6 (150 g) lasagna noodles broken into pieces (you can use gluten-free noodles)
1/4 cup nutritional yeast
1/3 cup (80 g) cashew butter (*see notes)
1 tbsp lemon juice
 Red pepper flakes (optional)
 Vegan ricotta or mozzarella to garnish (optional)
 Fresh herbs (e.g. parsley) to garnish
Instructions
In a sieve, rinse lentils under running water, set aside.
Chop the onion and garlic.
Heat oil in a large pot and sauté the onion for about 3-4 minutes over medium heat. Add garlic and sauté for a further one minute.
Add all spices (Italian seasoning, onion powder, paprika, sea salt, black pepper), the lentils, tomato sauce, tomato paste, cashew butter, and the vegetable broth or water. Stir with a whisk and bring to a boil.
Meanwhile, break the lasagna noodles into smaller pieces. Once the soup boils add the lasagna noodles and cook for about 9-10 minutes or until the noodles are al dente.
Finally, add the plant-based milk (or cream), the lemon juice, and nutritional yeast. Turn off the heat.
Taste and adjust the seasonings. Add more salt, pepper, Italian herbs as needed. You can also add red pepper flakes or hot sauce for a spicier soup!
Serve immediately and garnish with fresh herbs and vegan ricotta cheese. Enjoy!
The soup will thicken over time, as the noodles will absorb a lot of the liquid. Simply add more vegetable broth if you want to eat leftovers the next day. Store covered in the fridge for up to 5 days.

It's RAINBOW SUSHI TIME! 🌈  I'm keeping it rolling with eating the rainbow because isn't it so much more fun?! The colours used are all completely natural and nutritious 💞🌿💙 .
I added some umami packed garlic mushrooms, firey beetroot + peppers and refreshing cucumber + carrot. 💞💙 The rice is coloured with blue spirulina and dragon fruit for an amazing protein and anti-inflammatory boost! 💙💞 It's wrapped with seaweed/ boring and I also sprinkled some crunchy chia seeds over the top as it's such an energy booster and allergy friendly 🙌🏾⭐

Once you have prepped the sticky rice and your choice of flavoured veg for the filling, the rest is pretty quick. This was actually my first attempt at making sushi, so I'll share the perfected recipe once I try out a few more flavours for the veggies and dips to give you my best combos! 💞⭐ Watch this space! 🌈

Curry spiced vegetables 🌶

I love sides. I think they can really make or break a meal. Something that drives me insane about living in the UK are the super plain veg you get with meals. Not like I don’t like just some good old boiled veg with butter, but there are a lot of simple things you can do to make a side dish more interesting!

We usually try to make a big meal on Sunday with lots of sides so that it lasts us 3 nights. So here is part one to an Indian themed dinner we had a few weeks ago 🇮🇳

~1 tsp ground coriander
~1 tsp tumeric
~1 tsp curry powder
~1 tsp cumin
~1 tsp fresh grated ginger
~ 3 tbs olive oil
~salt to taste

You can use any veg you want! I did carrots, sweet potato, broccoli, and cauliflower. Toss everything in the ingredients (except the ginger) and cook at 450 for 20 minutes. Depending on how you like the doneness of the veg some may take longer (we did the carrots and potatoes for an additional 15). Add the ginger before serving and don’t forget the naan bread!!

There is NOTHING like making your own  Raspberry Jam! No added preservatives, no added sugars, no fillers or fake crap just pure fruit! It is so simple to make too. All you need is some raspberries I used @driscollsberry and a fork. Put your raspberries in a bowl and start mashing with your fork, its that simple. Mash until its the jam consistency you desire. HOW EASY!!! .

I toasted 2 slices of @udisglutenfree Multi Grain Bread then smear @justins Honey PB on top before I smothered my jam all over.

Chinese Chives Boxes (韭菜盒子)

Have you tried this chives box before? Today I’m sharing a Native Northern Chinese dim sum with you. Made the dough from scratch! and I love how those turned out. It’s so delicious and satisfying😋

Dough recipe: (Make 24 boxes) 
400 g flour
210 ml water
1/2 tsp salt 
Add the flour and salt into a big bowl for easy kneading. Pour water little at a time. It’s all depending on the quality of the flour, some may need 210 ml  of water and some may need less than  200 ml to have perfectly knead dough. Knead the dough till it doesn’t stick anymore on hand. (add flour if dough is too soft) Cover and let the dough rest for 15 minutes. 
Fillings recipe: 
350g Chinese Chives, clean & finely chopped 
1 carrot, finely sliced 
100g shiitake mushrooms, chopped 
4 clove garlic, minced 
2 tbsp oil
Sauce ingredients: 
1 tbsp sesame oil 
1 tbsp soy sauce 
1 tsp white pepper 
1 tsp ginger powder
1 tbsp mushrooms stir fry sauce 
Salt for taste

✔Heat up oil in a wok, add in the garlic and sauté till fragrant. Then add the carrots and cook till soft, follow by mushrooms. Add in the sauce ingredients and stir for another 2 minutes. Turn off the heat, lastly add in the chinese chives and mix well. Let it cool completely before use. ✔Take out the dough from the bowl and knead for a few seconds. Divide the dough into 24 pieces (about 40g per piece). Roll each piece into a circle (about 4 1/2 inch in diameter). Place the fillings in the middle and seal it in the same way as to fold a dumpling. Place the fold side down and gently patch it flat. ✔Heat 2 tbsp of oil in a frying pan, place the fold side down and cover it. Cook with medium low heat. Flip the chives box until both side are golden brown. ✔Finally serve hot with chilli oil or your favourite sauce
