Imagine if rush hour traffic spread across 20 lanes was suddenly, and abruptly, forced to merge to a single lane! And imagine if all those cars were literally bumper to bumper, exerting pressure on one another as they all try to consolidate into one lane.
That's an oversimplification of what's going on in a dual wall basket or pressurized portafilter. There's a constriction or valve in place to reduce flow, creating back pressure in the system, and ensuring that the coffee is being extracted with sufficient time and pressure to make an espresso. Another side benefit is that it does so while creating turbulence at the exit and this enhances crema, even when your coffee is old and stale 😉
