{NEW} Coconut Creamed Mushrooms + Spinach 🌱

#FaLaLaLa 
I was going to tagline this "not yo grammas creamed spinach" then I thought/remembered...geez...grammas stuff is THE BEST ever...no contest there. This is THAT as far as flavor goes, just most likely a bit healthier because we used our favorite CFC modifications.

Can't wait to hear how you like this one!

makes 4 servings

Ingredients:
1 Tbsp olive oil, or unrefined coconut oil 
1/2 lb. fresh organic baby spinach
1 tsp Dijon mustard
1 cup full fat organic coconut milk, canned 
1 Tbsp gluten free flour, or Arrowroot powder 
1 medium sweet yellow onion, diced
3 cloves fresh garlic, minced
4 cups sliced button mushrooms
2 tsps freshly squeezed lemon juice
sea salt and freshly ground black pepper, to taste, about 1/4 teaspoon each 
Instructions:

In a large glass bowl, whisk your coconut milk, Dijon mustard, flour and a pinch of sea salt; whisk until really well combined.

Heat a skillet large with the oil over medium-high heat.

Add in your onions and garlic, sauté for few minutes until just beginning to soften.

Stir in your mushrooms, and continue cooking for 4-5 minutes more, stirring frequently until golden brown. Season with a tiny pinch of sea salt and pepper.

Squeeze in your fresh lemon juice and stir well.

Reduce the heat to a low, and pour in the coconut milk mixture, then simmer until just thickened, about 4 minutes or so.

Quickly add in the fresh spinach and stir until just wilted, just a minute or two.

Enjoy warm! ❤Rachel

Coconut milk pulao with cucumber raitha.
.
RECIPE - COCONUT MILK PULAO
Ingredients:
Basmati rice - 1 cup 
Coconut milk - 2.5 cups
Ghee
Whole spices 
Veggies of your choice 
Garam masala - 1 teaspoon 
Turmeric powder - 1/2 teaspoon 
Chilli powder - 2 teaspoons 
Salt to taste 
For the paste:
Shallots - 10
Garlic - 3 cloves 
Ginger - a small piece 
Coriander leaves 
Mint leaves 
Cloves - 1 
Cardamom - 2
Cinnamon stick - 1
. 
Method:
RECIPE WITH STEP BY STEP PICTURES IN THE HIGHLIGHTS! ⚪Prep: Soak the basmati rice in water for 20 mins. Grind all the ingredients (mentioned above) for the paste. Extract the required coconut milk. ⚪To a pan (I'm cooking the pulao using a heavy bottomed vessel and not a pressure cooker). Add in a spoon of ghee, add the whole spices (View the highlights to see I've used), add in the chopped veggies (onions, tomato, potato, Cauliflower, fried paneer, carrots, beans, mint leaves). Sauté for 5-7 mins. ⚪Then add in salt, turmeric powder, chilli powder, garam masala and the ground paste. Mix everything together, then add the soaked basmati rice and mix it well. ⚪Add the coconut milk to the masala and rice and cook it covered over a slow flame till the rice is completely cooked (15-20 mins). Smear some ghee and serve it.

Buongiorno piccoli dormiglioni, finalmente sabato e so che mentre io mi alleno prima di andare a lavoro, voi siete ancora tra le braccia di Morfeo, meravigliosamente immersi nell'atmosfera che si respira nei giorni di riposo le settimane prima di Natale.

Voglio darvi due proposte salate oggi, con uno dei miei cibi preferiti di sempre, il ᗷᗩᔕᗰᗩƬƖ ❣️ Per me il cibo degli dei,  che più mi soddisfa, perché è uno di quei cereali che sta bene con tutto, persino con il dolce😍.

Allora due versioni di ᑕᑌᖇᖇƳ, easy e veloci, con lo stesso apporto calorico/ macros.
1. Per il curry di carne tagliare a cubetti della stessa dimensione il petto di pollo e lasciarlo macerare nel latte di soia (fino a coprire il pollo) e curry. Poi versare tutto in padella e  lasciar asciugare. Da accompagnare al riso basmati cotto per assorbimento.
2. Per il curry di pesce tagliare a cubetti un filetto di merluzzo e della zucca, passarli leggermente in farina e poi  scottarli in padella. Aggiungere successivamente latte di soia e curry e lasciar rapprendere.

Just fun. 
I did a really pro-active adulty thing for myself in preparation for our showcase tomorrow and I am proud.  I made a protein/ carb/ veggie packed to-go meal because I am usually scrambling to get everything together, I'm anxious about a hundred things and I have definitely forgotten to eat before and it was not good. I'd like to avoid a stress meltdown. Yay I'm learning!
