If you are hesitant to use technology for an appointment, please be assured that I personally will do everything possible to make sure that you are set up for a great experience. ⁣⁣

Shredded chicken tostadas for lunch.

The chicken was simmered in green salsa for about and hour then shredded. You can make a lot of this a few days in advance as it will be good for a few different meals.

Baked corn tortillas for about 15 min at 375. Make sure you keep an eye on these things. They go go from almost done to severely burnt in seconds. Trust me 😑😂

Layered with lettuce, tomato, cheese and cilantro.

About 170 calories per tostada depending on your toppings. You could always sub out avocado for cheese.

Swap for tofu for a 100% vegan version! I used peppers, mushrooms, tomatoes and peas!
