Ingredients 🍱:
Easy Saucy Ramen Noodles
2-3 servings:
2 (70g each) uncooked ramen “bricks” or noodles of choice
Spring onions & sesame seeds, for topping
Sauce
1/2 cup room temp. water
3-4 tbsp soy sauce, adjust according to desired taste
1.5-2 tbsp corn starch*
2-3 tbsp maple syrup or other liquid sweetener, adjust according to desired sweetness
1 tbsp lemon juice
1/4 tsp ground pepper
1/2 tbsp sesame oil
Note:
*if using less soy sauce and liquid sweetener, start with 1.5 tbsp corn starch

DIRECTIONS 👩‍🍳:
Mix all the sauce ingredients until well incorporated.
Boil water. Add in the ramen or other noodles of choice and half cook or cook until chewy.
While the noodles are cooking, heat a pan. Add in the sauce. Leave to simmer over medium heat.
Add in the noodles and mix in sauce. Cook over medium high heat until the noodles absorb the sauce and sauce thickens. Enjoy while hot!

Something I’ve been talking about with a lot of my clients lately is the idea of “balance” when life feels very, VERY imbalanced.⁣

There’s no denying that now is not the most ideal or comfortable time to be heading full force toward a fitness goal, but also I know that for many of my clients, working toward their fitness goals despite what’s going on in the world is giving them a sense of control, purpose and focus in this time.⁣

And for others - maybe they just need to focus on getting through the day. Because that’s where they’re at right now.⁣

In Balance & Thrive, my definition for “finding balance” isn’t about arriving to a certain place of “ultimate balance” and staying there - that’s impossible. BALANCE is actually the ability to always be working toward aligning your behaviors with your priorities.⁣

For example, if you say weight loss is important to you and a top priority, then you show up for what’s required to achieve weight loss.⁣
⁣
Or, if your mental health is important to you and needs to be top priority, then you show up for THAT and do the things required to protect that.⁣
⁣
Those things aren’t mutually exclusive (meaning, you can have both be a priority and show up for both), but my point is: balance is when your daily actions, behaviors & thoughts match what you say is your top priority.⁣

What does being out of balance TRULY look like?⁣
⁣
When you say fitness is your top priority, but you’re unwilling to do anything in fitness that makes you uncomfortable.⁣
⁣
Or when you say your marriage is your top priority, but you constantly put your spouse second to working out or social media or hanging out with your friends.⁣
⁣
Imbalance. Priorities not matching actions.⁣
⁣

Everyday it seems like a constant debate about what the best diet is.  In my opinion, based on my research, I believe a low carb diet with quality meat is best.  I think that ruminant animals do a better job breaking down plant material and acquiring their nutrients than we do and we are better able to absorb those nutrients through eating meat.⠀

Regardless of where you stand on that, I think we can agree that eating a bunch of highly processed foods should be avoided.⠀

If you’re keto, your diet shouldn’t be made up of primarily fried pork skins and processed nacho cheese.⠀
-⠀
If you’re plant based, your diet shouldn’t consist of processed fake meats and other foods that just have a plant based stamp of approval on it.⠀

If you’re carnivore, the primary make up of your diet shouldn’t be processed meats.⠀

Breakfast this morning and I’m starting off with the right food. Straight from week one in the SheGainz meal plan. Plenty of carbs and plenty of protein thanks to Techui and my oatmeal. Before I eat I’m taking drinking my multivitamin for energy and to strengthen my immune system. I can’t stress that enough. Every time I turn on the news I’m ready to take some more 😳 seriously. Have you seen this recipe from yeaterday? 😁 I liked this colour so much that I couldn't not post another picture 😍
330g grated courgettes
25g almonds and/or cashews
70g extra virgin olive oil
10g basil leaves
35g grated Parmigiano cheese (omit it if vegan)

Blend all the ingredients together. Perfect as a dip, and also on top of pasta, of course 🍝
And GREAT with salmon 👌

1️⃣ CUMIN-SPICED BLACK BEAN, SPINACH AND SWEET POTATO QUESADILLAS with guacamole, salsa and some mango slices. Served with some greens 🥬 . For the quesadillas: mash black beans and roasted sweet potatoes with some cumin, salt and pepper, Heat 2 tortillas over medium high add some of the sweet potato 🍠 mash with some sautéed spinach and onion. Fold over after two minutes and cook for about a minute more on each side.

2️⃣ ROTISSERIE CHICKEN COBB SALAD with added baked sweet potatoes. Made with greens, no sugar bacon, and a mustard yogurt dressing (just some Greek style yogurt, Dijon mustard, coconut 🥥 aminos, salt and a couple drops of honey 🍯 .

3️⃣ Cajun shrimp 🍤 , sweet potato 🍠 noodles (I just steamed them slightly), roasted broccoli, cabbage, and I used my cashew date dressing on the noodles. DRESSING: 1/4 cup cashew butter, 1 tablespoon yogurt, 1/4 cup water, 1 tablespoon lemon 🍋 juice, 1 teaspoon apple cider vinegar, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon cumin, 1-2 teaspoon date syrup.

4️⃣ greens, bake sweet potato 🍠 stuffed with mashed avocado 🥑 , plus some smoked salmon, blueberries and yogurt (for some extra protein and the berries).
