1️⃣ CUMIN-SPICED BLACK BEAN, SPINACH AND SWEET POTATO QUESADILLAS with guacamole, salsa and some mango slices. Served with some greens 🥬 . For the quesadillas: mash black beans and roasted sweet potatoes with some cumin, salt and pepper, Heat 2 tortillas over medium high add some of the sweet potato 🍠 mash with some sautéed spinach and onion. Fold over after two minutes and cook for about a minute more on each side.
2️⃣ ROTISSERIE CHICKEN COBB SALAD with added baked sweet potatoes. Made with greens, no sugar bacon, and a mustard yogurt dressing (just some Greek style yogurt, Dijon mustard, coconut 🥥 aminos, salt and a couple drops of honey 🍯 .
3️⃣ Cajun shrimp 🍤 , sweet potato 🍠 noodles (I just steamed them slightly), roasted broccoli, cabbage, and I used my cashew date dressing on the noodles. DRESSING: 1/4 cup cashew butter, 1 tablespoon yogurt, 1/4 cup water, 1 tablespoon lemon 🍋 juice, 1 teaspoon apple cider vinegar, 1/4 teaspoon salt, 1/4 teaspoon pepper, 1/4 teaspoon cumin, 1-2 teaspoon date syrup.
4️⃣ greens, bake sweet potato 🍠 stuffed with mashed avocado 🥑 , plus some smoked salmon, blueberries and yogurt (for some extra protein and the berries).
