Lighten up your enchiladas! These are made with organic ground turkey, organic enchilada sauce from @sprouts and just a little bit of grass-fed cheddar cheese on top! Experimented and used half almond flour tortillas, and half @missionfoodsus carb balance tortillas. Low carb enchiladas!! Surprise surprise! The almond flour tortillas were actually better 💥 Oh, I also included a picture of my husband dancing with the enchilada casserole as he polishes off the dish 😆
To make, preheat oven to 375. In a sauté pan, cook one chopped onion with 2 tbsp evoo on med-low heat until soft, about 5 mins. Add organic ground turkey and cook until meat is no longer pink, breaking up clumps into small pieces. Add organic taco seasoning packet and cook as instructed.
Warm up the enchilada sauce in a small sauce pan and then remove from heat. Spoon sauce over the bottom of a casserole dish until sauce is evenly distributed. Grab a plate and add a big spoonful of sauce then dip your tortillas flat side into the sauce making sure to coat each side. Spoon ground turkey mixture into the tortilla and roll and then add the enchilada to the casserole dish. Repeat until casserole dish is full of enchiladas about 8 to 10. Spoon the remaining sauce over the top of the enchiladas, add a handful of cheese, chopped green onion, and a small can of black olives. Place casserole dish in the oven and cook for 15 to 20 minutes, or until cheese begins to bubble and top gets a bit crispy. - 2 hours ago
