"Linzer Torte" recipe:
300 g Flour
1 pinch salt
1 tsp baking powder
100 g ground hazelnuts
120 g sugar
½ tsp ground cinnamon
1 pinch clove
1 pinch cardamom
170 g Butter and something for the mold
2 Eggs (size M)
some flour for dough processing
250 g Raspberry jam or currant jam
1 tbsp milk
Step 1: Mix the flour with salt and the baking powder. Add nuts, sugar and spices. Separate an egg, set the yolk aside. Knead the butter in pieces, whole egg and and egg white briefly into a smooth dough and put in cling film and chill for 30 minutes.
Step 2: Preheat the oven to 180 degrees (fan oven: 180 degrees). Grease the springform pan base ( Ø26cm) . Roll out half of the short pastry thinly on a lightly floured work surface. Cut out a circle Ø 26 cm and cut it into strips approx. 2 cm wide with a knife. Press a base from the remaining dough into the mold and press an edge about 2 cm high.
Step 3: Spread the smoothly stirred jam on it, leaving a 1 cm thin edge free. Place the individual strips of dough at a distance on the jam so that a grid is created. Whisk the egg yolk aside with milk and then brush the strips of dough. Bake in the oven for about 25 minutes. Let cool on a wire rack. Remove from the mold with a knife and serve with cream as desired. 🤗✌🏻
