This is Made, from @madesbananaflourco who is working with banana flour and catering many businesses around Canggu with: pancakes, tortillas, empanadas, bread, brownies (so good), pastries, desserts... And as many pre-mixed options including also coconut, rice and cassava.
It's interesting to understand the aim of a business... A pastry shop in this case aims to TEACH about the use of banana flour, because most people dont't really know how to cook out of their comfort zone and banana flour is far from any comfort zone... but is nutritious, gluten free and environmentely friendly.
Banana flour seems to provide prebiotics, improving your digestion. It's as bland as it can be, making it easy to work it out for both savoury and sweet dishes. Made uses the entire green banana for the flour, recovering the ones that were going to be thrown away. Because in Bali bananas are fully used, he gets them from Java. One ton per week.
When I asked how did he figured banana flour was his answer for his gluten free search, he says: I Googled it. Creativity comes from that need to sort out solutions. Such solutions can be as connected to the landscape... it is challenging, but very successful too.
I want to believe that collectively with as many of these creative entrepreneurs, we can change the food game to a more nutricious, delicious and ethical one.
