ESPRESSO PANA COTTA POTS / I am not a big Sunday batch cooker but now I’m spending lots of time making Wilson’s food, it seems silly not to just make a total mess of my kitchen at once!
This is so easy. For four pots, bloom 3 tbs of gelatin in 6 tbs of water, heat a litre of almond or coconut milk in a medium saucepan with two fresh espresso shots, add some Stevia or sweetener of choice and take off the heat just before boiling. Stir in the gelatin until dissolved and pour into your glasses. Let them cool down on the kitchen bench for a bit then pop them in the fridge over night. Add whatever topping you like. These pots are served with yoghurt and a GF muesli mix. Fresh fruit would be ah-mazing 😋 - 16 minutes ago
