These delicious peppers are easy to make and a great additional to your weekday dinners.
To make these: - heat oven to 200c/180c fan oven. Pop peppers on a plate and microwave for 5 minutes or until soft.
- place couscous in a bowl and cover with 125ml boiling water. Stir and cover for 10 minutes. Stir the couscous with a fork to break it up, then mix in the pine nuts, olives, feta, tomatoes and basil. - cut the peppers in half and then pile the couscous into the pepper halves. Bake for 10 minutes
