After all these years I had no idea how badly I needed Chamorro food in my life (or how much I need to go to Guam to try it) 🇬🇺 This city never ceases to amaze me, and tbh this place is quite the improvement from the 1-star Michelin F2T clone it replaced last year 🥱🍵 .
1/ Gamson Kelaguen: Octopus and baby tomato ceviche with scallion, lemon, coconut, and hot pepper on corn titiyas
2/ Uhang Kelaguen: Shrimp ceviche with scallion, lemon, coconut, and hot pepper on corn titiyas
3/ Chamorro mushroom empanada topped with toasted rice, achote, and parmesan
4/ Tomales Bay oysters with fina’denne’ (Chamorro condiment made from soy sauce, coconut liquor, onion, and peppers)
5/ Shrimp pancake baked in a cazuela with peas and corn, with achote seasoned rice and braised yu choi in the background
6/ Golai Hagon Suni: Spinach in coconut turmeric curry with crispy Japanese sweet potatoes
7/ Lechen Birenghenas: Barbecued eggplant marinated in coconut milk and calamansi, topped with toasted rice - 33 minutes ago
