🍃Did you know you can make pesto without fats? I’m not able to have a lot of fats, including plant based, right now because I have fatty liver. I’m having trouble breaking down some of the foods I eat. This is why I’ve been trying to be on a plant-based diet, low fat diet. It’s hard because I love meat!!! Which is why I end up eating chicken, shrimp, or fish occasionally when I just can’t stand not having it anymore.
This pesto is just fresh basil, spinach, garlic, lemon juice, water, and salt. I miss the nuts and oil but this is still refreshing in my gluten free noodles.
For dessert, I have a bowl of kiwi, mandarins, and bananas with a local Eucalyptus honey drizzle🍯
