I’m always finding delicious recipes.  Here is one of my favorites.... Supersoulfood Pancakes: •3 tablespoons ground flaxseeds • 3 1/2 cups of coconut milk (any milk alternative really). • 1 cup of garbanzo flour • 2 cups of brown rice flower • 2 1/2 tablespoons of potato starch • 2 tablespoons of baking powder • 2 tablespoons of chia seeds • 2 tablespoons of hemp seeds 1 teaspoon of vanilla extract 2 1/2 tablespoons of coconut sugar ..... mix together and grill! Then enjoy 😊 •

Vegas 🙌🏻 (swipe to see the pictures get continually worse)⁣

We’ve been having like wayy too much fun (in a good way!). Tomorrow Casey and I have been together 2 years and this trip has been amazing for reconnecting and just remembering all the fun we’ve had the last couple of years. ⁣
⁣
I think so often we take our partner for granted. Case and I live together and so we’re almost always together but not really present. ⁣
⁣
We both spend a lot of time on our phones or laptops working and well be in the same room but not talk for hours. It’s a grind in your 20’s! ⁣
⁣
But the last couple days have been nothing but just enjoying being together. So anyway after all of this sappy writing- it does not have to take a vacation to remind you to just tell your loved one you appreciate them. Tell them ALWAYS. And... go to Vegas. ⁣

Baked tofu in chili garlic sauce, lo mein noodles, and garlicky sesame baby bok choy by @cookingforpeanuts 🌱 Who'd love to try this bowl?

Recipe: Press 1-14oz block extra firm tofu to remove excess liquid. Cut into approximately 1-inch cubes. Transfer to bowl and with with enough garlic powder and paprika to coat tofu cubes. Bake at 400F on lined sheet until slightly crispy, about 20 minutes. Meanwhile whisk sauce: 2 minced garlic cloves + 2 tbsp sambal oelek + 3 tbsp low-sodium tamari or soy sauce + 2 tbsp rice vinegar + 1-1/2 tsp maple syrup (or to taste) + 1/2 tsp cornstarch. Heat sauce on low while whisking until slightly thickened. Add baked tofu to saucepan and mix. Heat another 30 seconds. 🌱Bok choy: Either 1) oil-free option: cook sliced garlic in a shallow layer of vegetable broth for a minute. Cut baby bok choy into 4 pieces lengthwise and add to broth. Cover and allow to steam about 1 minute or until slightly softened. Mix in a little tamari or soy sauce and top with sesame seeds. Or 2) Remove leaves from base of baby bok choy. Sauté sliced garlic in a little neutral oil for about 30 seconds. Add bok choy leaves and a little tamari or soy sauce and cook another minute until leaves just soften. Remove and top with sesame seeds and a little toasted sesame oil.

Does anyone else freeze their veggie scraps? 🙋‍♀️ If you don’t, you should definitely start! Once you have a freezer bag or container filled with scraps, throw them in a crock pot with as much water as you can fill, and leave on low for 8-10 hours or high for 4-5 hours! Be sure to add a bay leaf of two for additional flavor, or any other herbs, (thyme, rosemary, cilantro, parsley, etc.) and you have your own homemade veggie broth! 😍 I like to make sure I throw in some smashed garlic cloves as well. You can leave your veggie broth in your fridge for up to one week, or freeze up to three months! 😋🌱

I have been obsessed with overnight oats!
It’s like a sweet cold porridge and it’s filled with so many powerful nutrients. -The oats provide complex carbohydrates, fiber, and some protein.
-The chia seeds give you healthy omega-3 Fatty acids. They Help support your joints and reduce inflammation. It reduces blood pressure and is super healthy for your heart.❤️
-Soymilk provides a healthy boost of protein.
-Almond butter gives you some healthy fats and some protein.
-Berries are loaded with antioxidants and fiber.

Protein, fiber, and healthy fats keep you fuller longer. Complex carbohydrates like oats give you long lasting energy and you get your sweet tooth fixed all in this one meal!

Overnight oats
-1/2 Cup of Oats
-1 Cup of Soymilk
-2 tbspof Chia Seeds (Black or white)
-1 tbsp of Almond butter
-1/2 Cup of berries 🍓
Mix it up the night before and let it soak up in to a pudding of goodness.

I love making my oats in an almost empty nutbutter jar as convenience and to get the last bits of the tasty almond butter.😍 Let me know if you have tried them or how addicted you get after making this!

🌶🌱 Battered Spicy Cauliflower by @the_clumsy_vegan

Follow us @vegadishes for daily vegan recipes

Recipe

Ingredients
Cauliflower i floret cut into bite size pieces
Water
Oil for deep frying
For marinade
Vegenaise 1 T
Garam masala 1/2 T
Cumin powder 1t
Coriander powder 2t
Amchur powder 1t

For Batter
Flour 2 T
Corn flour 3 T
Salt 1t
Pepper 2t
Turmeric 1/2 T
Chilly powder 2t
Cider 1 C

Method
1) Bring a pot of water to boil and add cauliflower. Cook for 4-5 minutes and drain
2) Allow cauliflower to completely cool and coat in marinade ingredients. Palace in the fridge for 20-30 minutes
3) Make a thin batter by mixing all the listed ingredients
4) Dip cauliflower in batter and fry in olive oil
