Hoy nos levantamos temprano a entrenar 💪 y este #desayuno cayó como anillo al dedo 😍. Lo mejor de todo es que lo dejas listo desde la noche anterior y así queda lleno de sabor (además de #vegan ).
👇Aquí la receta:👇
APPLE CINNAMON OVERNIGHT OATS

Ingredientes:
o 1/2 taza de avena
o 1/4 de taza de chia
o 1 taza de leche de tu preferencia (yo usé de almendras)
o1/4 de taza de manzanas picadas en cuadritos
o 1 cucharada de canela molida
o 1 pizca de sal
o 1 cucharada de sirop de agave (opcional)

Preparación:
1. En un bowl mezcla todos los ingredientes y cubre con papel transparente. Deja reposar toda la noche en la nevera y sirve al otro día con trocitos de #manzana 🍏 y #canela 😉.

GREEN POWER BOWL🍜
That was yesterdays lunch aka post workout meal to re-fill my glycogen storages. 
I simply throwed everything together in a pan but really enjoyed the outcome😊

Green base:
♡ (frozen) broccoli
♡ (frozen) edamame beans
♡ green aspargus
➡fry all of that in light coconut milk
➡I also added almond flour, nutritional yeast, herbs and spices

Protein sources:
♡ pea crumbles (soaked in veggie broth and added to the veggies)
♡ firm tofu (panfried seperately)

Toppings:
♡ apple ♡ parsley

Jackfruit taco bowls 🌮. Jackfruit has zero protein so I've added a tin of pinto beans to round this meal out. I also make the guoc with a mix of avo and cottage cheese, vegan greek yog or coyo would be ace too!

Jackfruit pulled taco filling:
1 tin drained jackfruit, sliced lengthways
1 tin drained pinto beans (or any beans!)
1 red onion
4 cloves crushed garlic
1 tsp cumin
1 tsp smoked paprika
1/2 cup veg stock
2 tbs tomato paste
1 tsp agave (or and sweetener or leave it out)
Pepper
If you don't have children, go wild with some chilli/tobasco 🌶️ Saute onion and garlic until soft, add all the other ingredients and simmer for 5 mins. Roughly mash with your spatula until the jackfruit has pulled apart and some of the beans are squashed.

I've served it with sautéd garlic kale, cherry tom, cucumber, guocamole, lemon and of course corn chips!
