Made it through another week! Nowadays that seems like an accomplishment in itself 👍🏻 had this beautiful bowl of Chocolate Banana Pudding Overnight Oats 🍌🥣🍫🥰 before I did an hour HIIT workout this morning. Great pump up 💪🏻 hope everyone has a relaxing weekend!

Makes 1 serving
•
🍌 85 grams rolled oats
🍫 1/2 scoop protein powder (I use my favorite @legionath vanilla whey 😁)
🍌 1/2 banana mashed
🍫 1 T powder peanut butter
🍌 1/2 T cocoa powder
🍫 2 T nonfat Greek yogurt
🍌 1/2 cup unsweetened almond milk
🍫 splash of vanilla extract
🍌stevia and cinnamon to taste

Combine all ingredients except topping and refrigerate overnight. Heat in microwave 1-2 min. I topped with more banana slices and melted peanut butter 🤤

Per serving without toppings
🍫530 calories
🍫78 grams carbs

These potatoes are healthier than most. They have far less butter and no milk or heavy cream, but yogurt instead. ⁣

Twice Baked Potatoes⁣
.⁣
4 potatoes, scrubbed and thoroughly dried⁣
8 slices turkey bacon, pan fried and finely diced⁣
2 garlic cloves, pressed⁣
1/4 bunch parsley, minced⁣
1/4 large onion, finely diced⁣
1 Serrano pepper, minced⁣
2 tbsp butter, cubed⁣
1/2 c plain yogurt⁣
1/4 c shredded cheddar cheese⁣
.⁣
Lightly coat potatoes with olive oil and coarse salt.⁣
Bake on a baking sheet lined with parchment in a 400 degree oven for 1 hr.⁣
In a skillet, heat two tbsp olive oil and fry onions, pepper, turkey bacon, garlic, and parsley. Sauté until turkey bacon is cooked through and slightly brown. Set aside to cool. ⁣
Remove potatoes from oven and cool. ⁣
When cool, carefully slice eat potato in half and gently scoop out the insides into a large bowl, bring careful not to tear the skin. ⁣
To the potatoes in the bowl, add butter, yogurt, and salt & pepper. Stir to thoroughly combine. ⁣
Scoop filling into potato skins and sprinkle with cheese. ⁣
Bake at 350 for 15 minutes. ⁣

Tandoori club sandwiches..

Club sandwiches are a complete meal with bread, meat, dairy, veggies everything together ... always comes with a side of fries and cole slaw.. I always thought that making club sandwiches is too much effort.. and actually it is as it requires too many ingredients then assembling takes time too.. My sink is literally flooded with dishes but once in a while treating your family is worth it.. my husband and kid enjoyed it to the fullest so what else do you want .. do you agree? try this out and let me know how your family felt .. .

Easy Peasy staple diet during this hot spell ☀️ I always have a batch of this made up as a dollop here and there just makes a snack that extra bit special.

I use tinned chick peas , tahini if I have it , fresh lemon juice, black pepper, pink Himalayan salt, freshly crushed garlic, cumin and rose harissa and wild garlic infused olive oil . 
Perfect plant protein to spice up a lunch time salad .

🌱Vegan risotto recipe🌱 💚 Chop a Leek and fry in oil/butter/fat of your choice (5-10 mins) 💚 Add 3-5 cloves chopped garlic
💚Add some risotto rice (add more oil if dry...the rice will soak it up)
💚 Gently cook until rice turns translucent.
💚If you're lucky enough to have some white wine, add some... Watch the rice sizzle.
💚Add some stock (about a pint)
💚Gentle cook, stirring so the bottom doesn't stick
💚Add any greens you like (peas, beans, brocoli etc.
💚Add a small can of coconut milk once the mixture has started to thicken. Add more wine too if you think it needs
💚It should start to thicken pretty fast at one point.
💚Once the mixture is thick and sticky, it's ready.
💚Squeeze half a lemon
💚Stir through spinach and basil if you have 💚Salt and pepper
💚Grated cheese (I had vegan cheese to hand, but substitute as you like.. Risotto is usually made with parmesan)

Friday Night Fakeaway - Quick & Easy Chicken Chow Mein

Great easy dinner to make for all the family 
What you need:
🍜 Egg noodles (1 nest per person)
🍜 2 chicken breast (sliced thinly)
🍜 1 onion (sliced)
🍜 1 pepper (sliced)
🍜 2 cloves of garlic crushed
🍜 1 or 2 fresh sliced chillies (optional)
🍜 4 tbsp soy sauce
🍜 1 tbsp sesame oil

What you need to do:
🔪 Prepare and measure all ingredients as above
🔪 Cook the noodles in boiling water for 2-3minutes, drain and set aside.
🔪 Heat 2tsp veg. oil in a wok or large pan and add the chicken. Stir-fry until cooked through (4-5mins depending on thickness). Remove from pan and set aside.
🔪 Stir-fry the onion, pepper, garlic and chillies (if using) until slightly softened. Add back in the chicken and stir through.
🔪 For the sauce, add the sesame oil and soy sauce to the wok. Stir to combine and heat until thickened slightly. Return the noodles to the pan.
🍜 Stir to combine all ingredients.  Serve and garnish with some salted peanuts/cashews for crunch or scatter with fresh herbs if available. Enjoy!!!! Total cost of dish €6.50. Cost per person €3.25! 
Total preparation & cooking time: 25mins.

It’s cool - you can be totally honest and tell a dietitian if you hate salads. I won’t shun you.

This was my lunch today because I had all the ingredients and truthfully - I love salads. But, they need to have lots of ingredients with different tastes (especially pungent ones like pickled onions and blue cheese - don’t @ me) and a crunch (today was @marysgonecrackers broken into ‘croutons’). Hand me a basic house salad with shredded carrots and balsamic, and I will politely decline.

Let it be clear - salads (of any variety) don’t have to be YOUR lunch. So many of my clients have expressed their dread of salads but knowing they “have” to eat them. Who wrote that rule?

How about this👆🏻Couscous Salad with CRISPY Roasted Asparagus!? 🤩 Sweet, caramelized onions, tangy feta, tender pearled couscous and the satisfying crunch of perfectly roasted asparagus makes this a tasty side you’ll want to keep on the rotation all season long.

Ingredients: •1 1/3 cup dry pearl couscous •1 3/4 cup broth or water •1/2 red onion, diced •1  yellow or orange bell pepper, diced •1 bundle fresh asparagus (the skinnier the stalks, the better) •feta •olive oil •salt, pepper, and garlic powder, to taste ⠀⠀

Directions: Heat oven to 400 degrees. Place fresh asparagus on a sheet pan and lightly drizzle with oil and season with salt and pepper. Roast for 15-18 minutes or until golden and tops are extra crisp. Chop into 2” pieces for salad. ⠀⠀
While asparagus is roasting, heat olive oil in a skillet over medium. Add onion and a pinch of salt and sauté for 4-5 minutes, until onion begins to caramelize and turn golden. Add pepper and sauté for an additional 2 minutes. Remove veggie mix and set aside. Add dry couscous to skillet along with broth and bring to a light simmer; couscous is done when tender and liquid is absorbed. Run under cool water and drain. Transfer to a mixing bowl with onion and pepper, 1-2 tbsp olive oil, feta, and season with salt, pepper, and garlic powder. Add asparagus and toss well.

Sausage, tomato, spinach pasta 
Ingredients 
3 tbsp olive oil
1 pack of Richmond Meat-free sausages chopped into pieces 
3 garlic gloves, sliced thinly 
1 red chilli, sliced 
150g cherry tomatoes, cut in half 
1 tin of Plummer tomatoes
Pinch of Oregano 
Half pack of Basil leave, torn 
Pasta (short, e.g. Penne)
Spinach 
Method: 1.) Boil a large pan of salted water and heat a large frying pan on a medium heat 
2.) Add pasta to the boiled water and cook according to instructions. Drain and set aside. 
3.)Whilst the pasta is cooking add olive oil to the frying pan and then add the sausage chunks and brown them for 2-3 minutes.
4.) Add garlic to the sausages and cook for a further 2mins.
5.) Add the cherry tomatoes, chilli and oregano then too in the plum tomatoes, simmer for 10mins until  the tomatoes begin to break up in the sauce. 
6.) Mix the pasta, basil and chopped spinach into the sausage and tomato sauce.
