QUICK ONE: Baked Smoked Haddock with Spinach and Tomato Spaghetti.

1. Pre-heat oven time 180 degrees.
2. Season haddock with salt, black and white pepper.
3. Bake in oven for 12-15 mins.

Spaghetti: 
1. Chop 1 onion, 3 cloves of garlic and 1 small tomato.
2. Heat pan and fry onion, garlic and tomato. Add a little bit of water to this if it gets dry. This will help soften the tomato. 
3. Add 1tsp of salt and 1 tbsp of mixed herb seasoning.
4. Add a tbsp of butter to thicken this.
5. As this is cooking, add some water from the spaghetti - the starch will thicken and help create the sauce! 
7. Squeeze half a lemon (or to taste!) 8. When sauce is thick enough add a handful (or more) or spinach.
9. Turn heat off - spinach will cool from the heat of the sauce! 
10. Plate spaghetti and place fish on top! 
P.S I like to throw in some olives to this just for extra flavour! Add this in with the butter and mixed herbs! •

Are you tired of making breakfast every morning? Is this self quarantining causing more time in the kitchen?
I suggest making a breakfast casserole - it's fairly easy, lasts a couple days, and the kids will have fun helping you make it 
Recipe:
- Preheat oven to 400
- Frozen tater tots to fill the pan
- Cook the 1 lb of ground sausage and lay over the tots
- pour shredded cheddar cheese (as much as u want)
- Chop half a bell pepper - Scramble 11 eggs and including the bell pepper
- Add a 1/2 of teaspoon of Salt/Pepper
- Pour the eggs over the tots, sausage & chz
- Add a little more cheese - Put into the over and let it bake for 40-45 min

And boom 💥💥 you have a comfort breakfast food that lasts for a couple days and keeps you out the kitchen! :

LEFT OVER LAMB RISOTTO - My own recipe for the 1st time 😆 so yummy. Made it up and glad I did. Amounts depend on how many you are cooking for- just chuck it in 😆

Ingredients
Left over roast lamb chunks
Half mug of peas
Chicken stock
Chilli flakes
Tablespoon mint sauce
Salt and pepper
Splash of red wine
Small red onion
Risotto rice

1. Fry onion till soft.
2. Cook off red wine.
3. Add rice and stir for a minute and throw in chili flakes.
4. Start gradually adding stock and stir.
5. When rice is about 5 mins from done add the peas and lamb and mint sauce and season.
6. Finish adding stock and when rice is cooked, serve and enjoy!

One of my favorite summer lunches is a quick, easy, and healthy wrap. Our whole family loves it, even the kids!

All you need is a wheat tortilla, 1-2 tbs hummus, a handful of arugula salad, baby beets, and feta cheese. Sprinkle with fresh pepper and you‘re ready to wrap.

Not sure about you but since we shelter in place I try even harder to eat healthy.  Although, I can‘t really pass on chocolate.😇 What’s one of your favorite meals? Ideally quick and easy.

Pesto stuffed bell pepper❤️ the easiest and healthiest lunch, which is surprisingly very filling! Prep time- 10 minutes, cook time- 13 minutes. 
Ingredients- 
1. 2 whole bell peppers
2. Pesto 
3. Half cup diced onions 
4. Chilli flakes 
5. Shredded Cheese (optional) 
6. Shredded cabbage (optional)
Method: 
1. Cut the top stem of the bell and remove the seeds. 
2. Fill the pepper with onions, cabbage and cheese 
3. Finally, fill the pepper with as much pesto as you can. Make sure to fill all the gaps in the pepper by stuffing the pesto adequately 
4. Bake the bell pepper in the oven for 13 minutes at 350 F!

See that broccoli at 2 o’clock? ↗️ It’s blanched, which is one of my favorites ways to eat it. Blanching makes it soft but still bright green and not limp at all. 👌🏼I see it in salad bars and it’s easy to make at home, too: ⠀

2. Scoop it out and place in a bowl with cold water (or run under a cold water faucet) to stop the cooking immediately. ⠀

Green chutney was a staple in my home growing up. We would use it to dress salads, as a dip for samosas or as a filling for sandwiches (my personal favourite). I make this chutney using a 2:1 ratio of coriander to mint leaves, cumin seeds, ginger and garlic, chilli flakes, salt and lemon juice. Honestly, use whatever ratios of these ingredients which you prefer and simply blitz them up.

Turkey kofte 
This is a really simple 7 ingredient meal that can be ready in 15 minutes and is absolutely delicious and full of flavour. 
Ingredients
500g turkey mince (we try and use 2%fat or less)
2tsp paprika
1tsp ground cumin
1/2tsp cayenne pepper
Salt to taste
1/2 onion 
50g Garlic butter (melted)

Recipe
First of all we make our own garlic butter and use approx. 50g butter and 3 crushed garlic cloves. Melt the butter in microwave, add garlic cloves and a pinch of salt. Otherwise melt store bought garlic butter 
Mix the spices; paprika, cumin and cayenne pepper into the garlic butter and add a pinch of salt 
Add turkey mince and diced onion. 
Heat a pan or a flat grill and add some olive oil (we use olive oil infused with garlic for some extra flavour, you could also add a crushed garlic clove to the oil for similar result) 
Create kofte shapes out of mince mixture
Place in oil, rotating every couple of minutes until cooked through and crispy. 
We serves this with spinach, cabbage, peas and asparagus and add some grated Parmesan on top. 
It also works well with couscous and spinach.
