Breakfast smoothie with my mate Elf (who may have got lost on his way from the North Pole and just arrived! But is here to make sure the girls are good 😇😂).
My fav smoothie is always banana, berries, Greek yoghurt, a few oats + to get my extra nutrients and healthy fats I always throw in almonds and chia seeds. And it’s delicious, filling and I can take it with me wherever!

Leftover veggie weeknight dinner! i had a bunch of leftover scraps and a butternut squash i needed to use so here it is. stuffed butternut squash with cheezy “chicken” meatballs in red sauce. the stuffing consists of broccoli, cabbage, onions and carrots with the squash filling. and the meatballs are homemade using TVP and poultry seasoning! no animals were harmed in the making of this dinner 🙂🥕🥦🐔🚫

Soup and salad dinner!
It's cold and I was craving soup.  So I made beef and onion soup.  I topped the soup with some croutons I made with the leftover low carb  bread I used for Thanksgiving stuffing and some cheese.  This meal really hit the spot.

Maçã é uma fruta que eu não gostava muito,  não achava graça.  Mas aprendi que algumas frutas consumidas com salada podem ser muito mais interessantes do que sozinhas,  no meu caso,  essa fruta é a maçã. Descobri que ela fica muito mais deliciosa nas saladas 💚 .
Se você não gosta de consumir saladas, tente fazer saladas diferentes, com frutas, sementes,  grãos e outros ingredientes que você ainda não tentou, porque vamos combinar que ninguém aguenta mais alface com tomate né? 😅😅😅

Ingredients:
Crust
* 1/2 cup almond meal
* 2 tbsp butter

Cheesecake
* 8 oz. cream cheese
* 1 large egg
* 1/2 tsp vanilla extract
* 1/2 tsp lemon juice
* 1 pinch salt
* 1/4 cup xylitol or sweetener of your choice

Instructions:
1. Preheat the oven to 350°F. To make the crust, melt some butter until liquid and mix in your almond meal until you have some that feels like crumbly play dough.
2. Take about a teaspoon at a time and press the dough into the bottom of a muffin tin. Tip: line your pan with cupcake liners for easy removal. Cheesecake is very soft and if hard to scoop out without causing damage! Bake these crusts for about 5 minutes. They’ll come out slightly brown and crispy.
3. Then take your room temperature cream cheese and beat it with an electric hand mixer or standing mixer until creamy. Then add vanilla extract, lemon, an egg and your sugar substitute xylitol in our case. Beat until all combined.
4. Use an ice cream scooper to fill all the crust-bottomed muffin tin cups evenly almost to the top (the mini cheesecakes will rise while in the oven but will flatten while refrigerating). You can also line each cup with a cupcake liner to make removing the mini cheesecakes easier.
5. Bake at 350°F for about 15 minutes. The mini cheesecakes should be slightly jiggly. Let them cool in the refrigerator for ideally 24 hours. But if you’re strapped for time, try putting them in the freezer for as long as you can.
6. Once the mini cheesecakes are done cooling, slide a knife around the edges of each muffin cup to loosen them up. Then use a fork and your hands to help them out cleanly. As a delicious bonus, slice up some strawberries and arrange them however you like on top of the mini cheesecakes. •

i feel myself getting lost amidst all the tests i’m studying for and the relationships in my life that are taking a mental toll on me. i don’t know what to do. i try to be practical and say it’s just 3 weeks, a few bumps on the road that will soon smooth out, but i know that’s an excuse. it’s my mentality of always feeling the need to work, please other people, and be in control of everything. 
so what to do? go back to the basics—and maintain a routine to keep my sanity. that means proper skincare, exercise, nourishment, and continuous learning (podcasts, books, and realizing how lucky I am to receive a good education 🙂). like ⬆️ some sweet potato boats filled w almond butter, @foragerproject unsweetened cashew yogurt, and @hukitchen chocolate. “Take a step, step again / It is all that I can do.” - Anna, Frozen II
