Banana Oat Bread🍌
If you want to go for a tasty and nutritious breakfast, which also keeps your spirit high, banana bread is just the easiest solution🎉
Banana bread seems to be "the official comfort food" during quarantine, maybe because it's a “no waste” recipe (that allow us to consume left over); or it may represents an easy way to have fun in the kitchen even if you're not used to it.
Bananas are also full of potassium, which helps reduce stress. I tried a slice with a spoonful of almond butter on top for an extra treat😇🤫 All you need is: -3 mashed bananas over ripened
-3 eggs
-1 cup wholemeal oat flour
-1/2 cup xylitol or honey
-1 tsp vanilla essence
-3 tbsp cacao powder
-1 tsp baking powder
-1/2 cup coarsely crumbled toasted hazelnuts+chocolate chips

Preheat oven 180°C. Beat your eggs with xylitol or honey, and add vanilla, cacao, baking powder; then incorporate mashed bananas and oat.
Line a rectangular tray high sides (mine measured about cm30x10) with parchment paper and pour your batter in; sprinkle chocolate chips and hazelnuts across the 
top and bake for about 15/20min (don't overcook, must be soft and wet)

This no-fail recipe makes the best moist and tastiest banana bread you will find! It contains no sugar or butter, so perfect for anyone trying to stay healthy during lockdown👏🏼👏🏼

This is one of my favourite things to make, it tastes absolutely delish and even better with some almond or peanut butter on top 🤩👌🏼

Everything you need to make it is below ⬇️

Ingredients:
• 2 eggs
• 1/2 cup melted coconut oil or olive oil
• 1/3 cup honey or maple syrup
• 1/4 cup milk or Greek yogurt
• 1 teaspoon vanilla extract (I used @little_pod)
• 1 cup mashed ripe bananas about 2-3 medium bananas
• 1 3/4 cups white whole wheat flour or regular whole wheat flour or plain all purpose flour
• 1/2 teaspoon ground cinnamon
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup dark chocolate chips or chopped walnuts, raisins, optional

Recipe:
1. Pre-heat oven to 325F. Grease a 9x5 inch loaf pan and set aside.
2. In a medium bowl, whisk the flour, cinnamon, baking soda and salt. Set aside.
3. In a large bowl, beat eggs, oil, honey, milk and vanilla for 2 minutes. Stir in the bananas, flour mixture and chocolate chips (or any other add ins of choice.
4. Pour batter into greased pan, sprinkle with some more cinnamon, raw sugar, or banana slices (optional) 5. Bake for 50-55 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, slice and enjoy!

Donut glazing fun today  day 2 of lock day baking. Trying to find a different thing to be inspired to do daily and keep  a routine going ! People might thing this challenge makes no sense when I cook everything daily.. but behind the scenes it is a struggle at times.I have to keep moving in the daytime to stop noticing the pain I’m in, so  cooking is my  therapy and a good distraction since I need to eat  lol 😂 . Sitting is my enemy at the moment , so having a daily cooking challenge will help  me to cope with some of my fibromyalgia symptoms that are flaring up with the stress outside my door.  I  have started to knit at night because once I sit ... that’s it my day is officially over !

HOW GOOD DO THESE LOOK!! . .

Carob Brownies....scrumptious!! .

. 
INGREDIENTS: (transition & maintenance) •1 cup of peeled, steamed and mashed sweet potato’s (about 2 small ones) •1/2 cup carob powder •1/4 cup maple syrup or 12 dates pitted and blended with a touch of warm water to make a paste
•1/2 cup activated brazil nut butter (you can use sunflower butter or hemp seed butter or pumpkin seed butter) * Addition pumpkin spice mix or Christmas spice mix or your favourite essential oil .

TO MAKE:
•Steam the sweet potato until soft and mash well in a medium bowl.
•Add the other ingredients and mix well.
In a lined tray add the mixture and spread evenly.
•Cook on 175 degrees for 20 minutes or until the knife comes out almost clean as you want some moisture left in them for that brownie chew with a crunchy crust on top.
•Allow to cool before cutting into squares and allow the kids to eat the trimmings.

The journey started TOUGH with many challenges. In March 2018, I realised that having our own manufacturing facility was essential for Bliss Fit Foods to move forward after a few trial batches with an external manufacturer who had different quality standards and didn’t have the same vision. I invested all that I had to set up our own factory.

It is beyond words how difficult the journey has been. The only thing keeping us going is the support from our loyal customers and my belief that eating QUALITY, REAL HEALTHY FOODS is the foundation to our overall health and wellbeing.

All of us deserve a long, healthy life and to feel good! I personally experienced the difference of being super healthy and being ill - just like 10 years ago when I was suffering Irritable Bowel Syndrome (IBS).
