▪️4 medium zucchini⁠
▪️1/2 cup plain breadcrumbs⁠
▪️2 cups ricotta⁠
▪️1/2 cup grated Parmigiano Reggiano⁠
▪️2 cloves garlic⁠
▪️3 medium lemons⁠
▪️1/4 cup parsley⁠
▪️1/4 cup olive oil⁠
▪️1 tsp kosher salt⁠
▪️1/2 tsp black pepper⁠

✔️INSTRUCTIONS⁠
▪️Preheat oven to 400f and set rack in middle. Cut zucchini and scoop out the interior seeds with a spoon. ▪️Season inside of zucchini with a total of 1 tsp kosher salt and a 1/2 tsp of pepper. Drizzle oil onto each one and bake the zucchini in a sheet pan for 20-25 minutes until fork tender.⁠
▪️In a pan over medium heat saute minced garlic in a 1/4 cup of olive oil until lightly golden. Set aside when finished.⁠
▪️In a large bowl mix the 2 cups ricotta, 1/2 cup Parmigiano Reggiano, 1/2 cup breadcrumbs, juice of 1 lemon, 1/4 cup parsley, and the garlic/oil mixture.⁠
▪️Let the zucchini boats cool for a few minutes after baking then stuff with the ricotta mixture. Sprinkle a touch of breadcrumbs onto each and arrange the sliced lemons in the pan. Broil the zucchini boats for 5-7 minutes on the middle rack until the cheese is bubbly and golden brown. Serve with extra grated cheese and lemon wedges. ⁠

▪️1 pound spaghetti⁠
▪️1 quart cherry tomatoes⁠
▪️1/2 cup packed basil leaves⁠
▪️10 cloves garlic⁠
▪️1 tsp kosher salt⁠
▪️1/4 tsp crushed red pepper⁠
▪️1/4 cup olive oil⁠
▪️1/4 cup extra virgin olive oil⁠
▪️1 cup pasta water⁠

▪️Cook pasta to al dente in salted (2 Tbsp kosher salt per gallon) water.  Slice or chop garlic and halve cherry tomatoes.⁠
▪️In a large pan set to medium-low heat saute garlic in a 1/4 cup olive oil until golden (about 3 minutes). After garlic begins to turn golden add tomatoes and saute for 2 minutes longer.  Season tomatoes with 1 tsp kosher salt and 1/4 tsp crushed red pepper flakes. ⁠
▪️To pan, add 1 cup of pasta water and cook for 1 minute longer.  Next, add the pasta and toss to coat.  Mix well and taste test, adjusting salt and pepper levels if necessary. ⁠
▪️After 1 more minute of cooking remove pan from heat and add 1/2 cup torn basil leaves.  Drizzle a 1/4 cup of extra virgin olive oil on to pasta and serve.  Enjoy!⁠

If you live in New York, you call it a meatball parm hero.  In other parts of the country, it’s a meatball sub, grinder or hoagie.  I just call it delicious!  There is simply nothing better than Italian meatballs in sauce with melted mozzarella and parmesan cheese on crusty Italian bread.  Recipe below👇⁠

▪️2 pounds Italian meatballs⁠
▪️3 cups tomato sauce⁠
▪️2 large loaves of Italian bread⁠
▪️1/4 cup parmesan cheese⁠
▪️1 pound mozzarella⁠

✔️INSTRUCTIONS⁠
▪️Preheat oven to 450f and set oven rack to middle. Heat meatballs and sauce in a pot until the meatballs are warmed all the way through.⁠
▪️Grate 1 pound of mozzarella cheese.⁠
▪️Slice 2 large loaves of Italian bread and place on a sheet pan. Evenly distribute 2 cups of sauce inside of the 2 loaves.⁠
▪️Layer the meatballs onto the bread and top with the grated mozzarella. Evenly distribute the grated parmesan cheese on top of the mozzarella.⁠
▪️Bake the meatball heroes/subs until the cheese is bubbly and the bread is toasty (about 10 minutes). Remove from oven and cut in half. Recipe makes four 8" long heroes. Enjoy!⁠

▪️1 pound portobello mushrooms⁠
▪️3 tablespoons olive oil⁠
▪️2 tablespoons butter unsalted⁠
▪️2 tablespoons balsamic vinegar⁠
▪️2 tablespoons parsley minced⁠
▪️1 teaspoon kosher salt⁠
▪️1/4 teaspoon black pepper⁠
.⁠
✔️INSTRUCTIONS⁠
▪️Remove portobello gills (optional), clean, and slice into 1/4"strips.⁠
▪️Heat a pan to medium-high heat and let it get hot. Coat the bottom of pan with 1-2 tablespoons of olive oil and saute mushrooms. Do not crowd mushrooms. Work in batches if necessary.⁠
▪️After the mushrooms release their water (5-10 minutes), continue cooking until the mushrooms turn golden brown.⁠
▪️Turn heat to medium and add the butter. Cook for 1 minute, then add the balsamic vinegar. Sautee for 1-2 minutes more or until the mushrooms absorb the balsamic vinegar.⁠
▪️Turn off heat and season to taste with salt and pepper. ▪️Sprinkle fresh parsley on top and serve. Enjoy!⁠

▪️Buy fresh firm mushrooms that are nice and dry. ⁠
▪️Removing the gills is optional.⁠
▪️Do not overcrowd the pan.  If necessary, saute in multiple batches.⁠
▪️Thyme is also a great herb to pair with mushrooms - give it a try instead of the parsley if you are so inclined!⁠
▪️Leftovers can be refrigerated for up to 3 days and microwaved to reheat.⁠

▪️2 bunches baby broccoli⁠
▪️3/4 cup plain breadcrumbs⁠
▪️1/4 cup pines nuts⁠
▪️1/3 cup grated parmesan cheese⁠
▪️1/2 cup olive oil⁠
▪️1 teaspoon kosher salt⁠
▪️1/2 teaspoon chili flakes⁠
▪️1/2 teaspoon dried oregano⁠
▪️1/4 teaspoon black pepper⁠

✔️INSTRUCTIONS⁠
▪️Chop a 1/2 inch off the stems of the baby broccoli. Coat baby broccoli with a 1/4 cup of olive oil and season with 1 teaspoon of kosher salt and a 1/4 teaspoon of black pepper on all sides.⁠
▪️Roast the baby broccoli for 15 minutes at 425f on the middle oven rack.⁠
▪️While roasting mix the breadcrumbs, oregano, chili flakes, grated parmesan, and 1/4 cup olive oil together to form the seasoned breadcrumbs.⁠
▪️Toast the pine nuts on low heat for 5-10 minutes until golden.⁠
▪️Remove baby broccoli after 15 minutes and top with the seasoned breadcrumbs. Roast for 5-10 minutes more or until the breadcrumbs are toasted and golden brown.⁠
▪️When finished sprinkle the toasted pine nuts on top and serve. Enjoy!⁠

Pasta Alla Norma is an amazing eggplant dish in a light tomato sauce with basil and Ricotta Salata. This candy cane cocktail is super festive and super delicious!  We tried to come up with a seasonal drink using candy canes that actually tastes good.  Well.  It's amazing!  Recipe down below and in bio link.⁠

INGREDIENTS⁠
-1 cup ice⁠
-3 small candy canes⁠
-1 1/4 ounce vanilla vodka⁠
-1 1/4 ounce white creme de cacao⁠
-3/4 ounce creme de menthe⁠

INSTRUCTIONS⁠
-With a mallet, crush the candy canes into a powder leaving some pieces larger than others. Place in a small, flat dish large enough to accommodate the top of the martini or coupe glass.⁠
-Moisten a paper towel with some vanilla vodka and run it along the rim of your martini or coupe glass.⁠
-Dip the glass into the candy cane powder and set aside.⁠
-To a cocktail shaker, add ice, vanilla vodka, white creme de cacao, and creme de menthe.⁠
-Shake vigorously for 20 seconds.⁠
-Strain and pour into the garnished glass. Serve immediately!⁠

NOTES⁠
-For a clear drink as shown here, use white creme de cacao. -If you use the dark, the drink will be brown.⁠
-Pulverize the candy canes as much or as little as you like!  I like seeing some larger bits of candy cane on mine but do what works for you!⁠
