I think I finally did it. I finally figured out how to make really really good gyudon. This Japanese beef bowl is so simple to make but for some reason, I couldn't make it like how they did in Tokyo. Until now. And of course I have the #recipe on the blog so you can too.

Serve the sweet, savory, oh so tender beef with rice and a raw egg yolk if you want to be 100% legit. Or go for a fried egg like I did. •

Crispy oven red potatoes 😋

🥔 To make them, use red potatoes, washed and sliced with a crinkle cutter, seasoned with salt & pepper (no oil needed) then baked at about 400°F for 30ish minutes, turning once, and  turn the broiler on for a minute at the end if needed to get some extra crisp. Dipped in some yummy spicy ketchup 😋 Happy Wednesday !

Basic Chunky Pasta Sauce

3 cloves garlic chopped 
1 onion chopped
1 capsicum chopped
4 tomatoes puréed
1 tbsp Olive oil
Basil
Mixed Herbs
Salt
Pepper
Chilli flakes

In a pan saute the onions & garlic with the olive oil, then add the capsicum & tomato and cover & cook till the tomato is cooked and all the liquid has evaporated. Add all the herbs spices and salt. .

This year Easter Sunday is going to look a lot different. My heart is heavy in all sort of ways, besides social distancing this is the first Easter that my girls will not have their Dad. He always spent the holiday with them and made sure they had all the fun (and candy) in the world, even after my yearly five-minute speech as to why he should cut down on the candy. Yes I was the adult one balancing the scale of fun and responsibilities, but in the end they are both equally important for a child and I’m so terribly sad that my girls lost that. I always gladly took a big fat step back around the holidays to let him do his thing because truthfully I could never even compete with his imagination. He would sprinkle glitter all over our front lawn and leave feathers and traces that the tooth fairy has surely passed by the night before, or the carefully hand written notes with paw 🐾 signature that the Easter bunny would leave behind after collecting all the fresh carrots and milk that the girls left on the counter the night before. You could only imagine the JOY stamped on their faces every time! HUG + LOVE all the people in your life for who they are because they all have a special kinda love and lesson to give you ❤️💙 .

Red bean & pepper chilli on repeat 🌶 If you don’t have red beans, use any kind you have; also, any pepper you have. If you’re short on peppers, add sliced carrots- it won’t be the same, but it’ll still taste good. The recipe in stories makes 4 good portions- keep in the fridge up to 3 days & in the freezer for up to a month (defrost in the fridge overnight). Hope you’re keeping well & you give it a try x

Chicken Thighs in Mushroom & Thyme Cream Sauce with Dijon Mustard!

This feast  is your ticket to Umami City. Give it a whirl, we promise one of the best meals of your life. This recipe is for four to five folks, if it’s just the two of you, reduce the ingredients by half.
Ingredients
6 to 8 chicken thighs, bone in, skin on
1 pound brown cremini mushrooms, cut into thick slices
2 - 4 shallots (depending on size) or 1 large onion, minced
4 - 5 garlic cloves, crushed
1/2 cup chardonnay
1/2 cup Marsala (or Sherry)
1/2 cup chicken broth (bone broth)
1 1/2 cups cream
1/4 cup extra virgin olive oil
2 oz butter (1/2 stick)
1 tablespoon duck fat (optional)
4 strips bacon, fried and chopped
20 thyme stems, leaves removed
1/2 teaspoon Spanish paprika
1 tablespoon porcini powder, (just buy dried porcini at the market and grind to a powder, optional)
2 teaspoons salt, 1 1/2 teaspoons for the chicken, 1/2 teaspoon for the mushrooms
2 teaspoons black pepper, 1 1/2 for the chicken, 1/2 teaspoon for mushrooms
1 teaspoon lemon zest
Cooking
Salt and pepper both sides of the chicken, especially under the skin.  Using a 12 to 14 inch cast iron pan, on medium high heat, sear both sides of the chicken thighs in the olive oil and duck or bacon fat, 12 to 15 minutes.  Set aside to cool, covered. 
In the same pan, add the butter to the existing oils and on medium to high heat, saute the shallots or onions until they are opaque.  Now add the mushrooms and garlic, saute until the mushroom slices are seared and very browned, about 12 minutes.  Now add the salt and pepper reserved for the mushrooms, and the porcini powder. 
Add the chicken broth and the white wine at the same time to deglaze, about 30 seconds.  Add the marsala and the cream, stir well until all liquids are simmered and blended.  This gravy should be a gorgeous creamy patina. 
Add back the chicken, lemon zest, paprika and the chopped bacon.  Turn the temperature to low medium, cover loosely and simmer until the chicken nearly falls off the bone, about 10 minutes.  Enjoy!  For more savory recipes visit our new five star eBook cookbook on Amazon and our blog, http://ourwildsavorykitchen.com  Link on bio.

Ingredients 6 to 8 chicken thighs, bone in, skin on 1 pound brown cremini mushrooms, cut into thick slices 2 - 4 shallots (depending on size) or 1 large onion, minced 4 - 5 garlic cloves, crushed 1/2 cup chardonnay 1/2 cup Marsala (or Sherry) 1/2 cup chicken broth (bone broth) 1 1/2 cups cream 1/4 cup extra virgin olive oil 2 oz butter (1/2 stick) 1 tablespoon duck fat (optional) 4 strips bacon, fried and chopped 20 thyme stems, leaves removed 1/2 teaspoon Spanish paprika 1 tablespoon porcini powder, (just buy dried porcini at the market and grind to a powder, optional) 2 teaspoons salt, 1 1/2 teaspoons for the chicken, 1/2 teaspoon for the mushrooms 2 teaspoons black pepper, 1 1/2 for the chicken, 1/2 teaspoon for mushrooms 1 teaspoon lemon zest Cooking Salt and pepper both sides of the chicken, especially under the skin.  Using a 12 to 14 inch cast iron pan, on medium high heat, sear both sides of the chicken thighs in the olive oil and duck or bacon fat, 12 to 15 minutes.  Set aside to cool, covered. In the same pan, add the butter to the existing oils and on medium to high heat, saute the shallots or onions until they are opaque.  Now add the mushrooms and garlic, saute until the mushroom slices are seared and very browned, about 12 minutes.  Now add the salt and pepper reserved for the mushrooms, and the porcini powder. Add the chicken broth and the white wine at the same time to deglaze, about 30 seconds.  Add the marsala and the cream, stir well until all liquids are simmered and blended.  This gravy should be a gorgeous creamy patina. Weiter geht die Roadshow Ende Februar 2021 im Seefischkochstudio in Bremerhaven. Das für Stuttgart geplante Vorfinale in der Phoenixhalle im Römerkastell wird im April 2021 stattfinden. Der krönende Abschluss wird das Finale auf der Anuga in Köln im Oktober 2021 sein.
