Great visiting the Cotterell warehouse in Amsterdam where Marika and Mariana from @gaia_cacao stock their fine flavor beans from Ecuador and Venezuela 🇪🇨🌱🇻🇪
The mission of these badass cacao ladies is clear:
"Connecting farmers directly with buyers, without middle men or traders. So that we can keep the supply chain short, transparent and create a higher value locally."
It was eye-opening listening to all the logistic challenges behind cacao: many things can go wrong at any point of the supply chain, from bad weather at origin to the wrong temperature on a container, together with rushed post-harvesting practices and inattentive stocking 🌎✈️🏭
You need to be extremely passionate about fine cacao to voluntarily deal with all this every day as a small company of two people!
What amazed me was also the quality control conducted by the Cotterell team on every sample: magnifying glass lamp at hand, 100 cocoa beans cut in half are spread on a squared sheet and analyzed one by one. The beans who don't make the cut are moved outside of the cells, and percentages on defective beans are calculated 🔍📊
Marika also gave us a practical lesson on how to recognize defective beans: slaty, moldy, under/over fermented, germinated, coupled or damaged. This is all stuff that her premium clients don't want in their chocolate.
