Take me back to Canada - where delicious charcuterie freshly shaved is the norm, and fruit of every kind is perfectly ripe 💕 put together this little platter after an impulse shop at Kensington Markets, and it was love at first bite
The meats came from Sanagan’s Meat Locker where you pull a number and wait to have a meat hawker slice and pack your meat, absolutely loved the vibe
• Prosciutto, boar prosciutto, and buffalo bresaola - I’m an absolute sucker for good charcuterie, and an even bigger fan of unusual/game meat creations compared to traditional pork. The prosciutto was beautifully mild, softly tearable, and perfect to serve with fresh figs. Boar is one of my favourite meats to be cured, it’s got such a gaminess but made well it is delicate at the same time. Finally I’ve never tried buffalo, but it reminds me of beef jerky in taste - just really meaty and beefy, but the texture was gloriously soft, it kinda felt like calf leather? 🤔
• Duck liver pate - silky smooth, this smothered over the toast was the most indulgent bite • Blackbird sourdough - their traditional loaf slightly on the acidic side for me, cut and fried in olive oil, I really would’ve loved to add some herbs to this
• Camembert - this gorgeous piece came from Global Cheese Shoppe, which is one of those very traditional cheese stores stacked wall to wall with every cheese you can imagine, and here is where I found the perfect piece. Perfectly ripe, with a gooey spreadable texture, and creamy flavour, I actually had to make more toast to finish it all.
