Sunday breakfast! Medu vadai & Arachchu vitta sambar.

Medu vadai: Crispy donut like snacks made by soaking dehusked black gram a.k.a urad dal & grinding it into a fine paste with salt, green chillies, ginger, onion & black pepper. Deep fried until golden brown.

#cookingtip: Dip the vadai in boiling hot water just for 2 seconds to drain the excess oil. This also helps if you prefer to soak the vadas in sambar before serving.

Arachu vitta sambar is a #tiffinsambar with boiled lentils cooked in tamarind paste with freshly ground spices & coconut. One of the best recipes for sambar out there.

Hey my peeps, after my peanutbutter jars failed (look at my story), I decided to go for another jar version, this time with *vanilla chia pudding
*mango lassi
*granola
*puffed quinoa
*frozen bluebs

I'm so happy with the result, that's how I like it, simple to make, vegan, healthy, delicious and beautiful ❤️
For the chia pudding I mixed
*250 ml oatmilk
*1 tsp vanilla extract
*5 tbsp chia seeds
*2 tbsp maple syrup
and stired for 10 minutes (basically my son did 🙈). Now put it in the fridge and let it sit for at least 30 minutes.

For the mango lassi blend
*1 ripe fresh mango
*1 cup coconut yogurt
*1/2 cup coconut cream (the thick part of a can of coconut milk)
*1 tsp dunaliella salina (optional) from @rawnice (use my code CLAUDISFOODWORLD15 to save 15 % - except bundles and limited editions) *1 tsp cinnamon
*a pinch of cardamom
and layer on top of the chia pudding.

I’ll name this the “Cloud Forest”
Inspired by the #cloudforest at #gardensbythebay , I’ve decided to create a brunch dish that is easy, simple and vegan friendly.

On the bottom of this dish, it’s a simple salad mixed with chopped bell peppers and kernel corns with olive oil and lemon juice dressing, with fresh tomatoes and caramelised onions surrounding the corners.

On top of this dish, it’s a sautéed king mushroom and a simple cloud egg baked to perfection!

With the blending of the leaves as the forest and burst egg yolk (see second pic) that resembles the flow of the water, it is truly inspired by the cloud forest.

🥑🍅 Cheesy Pumpkin Pasta .

Ingredients:

About 1/2 butternut squash/pumpkin – about 300gr 
1/4 cup of cashews – soaked in some boiling water for 30 minutes
1 white onion – peeled and finely chopped 
2 garlic cloves – crushed
1 tbsp of lemon juice
3 tbsp of nutritional yeast
Few sprigs of fresh thyme
1/2 tsp of smoked paprika 
1/2 cup or more of plant milk – soy or oat are great 
Plenty of salt and pepper to taste
1 tbsp of olive oil for frying 
For the miso mushrooms:
About 250gr of chestnut mushrooms – sliced 
1 tbsp of olive oil for cooking 
1 tsp of brown rice miso paste mixed with  2 tsp of boiling water 
Pasta of your choice to serve
Peel and chopped the butternut squash into bite size pieces. Steam the butternut squash pieces for 20-15 minutes until soft. Drain them and leave them aside.While the butternut squash is cooking peel and finely chopped the onion and add it a small frying pan with a touch of oil. Fry the onion on a low to medium heat for 5 minutes until it starts to caramelised. Add in the crushed garlic cloves and thyme leaves and cook for another minute.

Add the cooked butternut squash to a blender together with the onion and garlic, soaked cashews, lemon juice, nutritional yeast, smoked paprika, plant milk salt & pepper. Blend until completely smooth and silky. Add more plant milk if needed.

Cook the pasta according to the packet instructions. While the pasta cooks add the sliced mushrooms to pan with the oil. Pour over the miso paste mixed with water and cook the mushrooms on a fairly high heat for 10 minutes until all the liquid has evaporated.

Drain the pasta and put it back in the pan and pour in the butternut squash sauce. Mix everything together and fold in the tamari mushrooms.

I start work later on a Sunday, so I get to have brekkie in the garden with the pigeons.
I had a drinking coconut as a post-run treat yesterday. On finishing, I opened the back door and lobbed it across the garden. It broke open and I scooped the meat out. I pureed it together with soaked buckwheat, a dash of agave and a pinch of himilayan salt, and layered this on top of a thick smoothie of beetroot, frozen blueberries and sour cherries, lemon and a smidge of vanilla @rawsportofficial protein. Topped this morning with homemade chocolate. Blueberry banana bread for dipping.

Zondag ochtend is het perfecte moment voor een heerlijk ontbijtje.
Vandaag maakte ik de "Geroosterde havermout met mango, blauwe bessen en yoghurt" (pag. 62) uit #superfoodvoorelkedag van @jamieoliver 
Echt hele bijzondere smaken door de geroosterde venkelzaadjes en het rozenwater. Je bent gelijk wakker!

O Ja, de mango heb ik weggelaten want die had ik niet in huis.
