Normally on a special occasion such as today, my wife and I would go to one of our “date night” restaurants to celebrate. It’s usually an expensive Italian spot (@civico1845 ) or a classy favorite home-y spot like @donnajeanofficial. Don’t ask me why Italian. Maybe I’ve watched too many movies. But being the times the way they are, we are relegated to cooking at home once again.
Despite her work rhythm quieting down these days and deals falling through, @gratefully_home closed the biggest deal of her career today. So instead of going out for a glass of wine and a bowl of pasta, we’re doin it live. Celebrating with her doesn’t matter where we are as long as we remain grateful for our successes and hopeful during our failures while sticking together through all of it. My vegan “chicken” quesadilla! Using daiya cheddar shreds and lightlife plant based chicken! I’m so happy I discovered this stuff, it’s so realistic and soooo good. Also tons of protein and very low fat!

Grain free vegan chicken nuggets made from MUSHROOMS 🍄 .
Chicken of the woods is a local mushroom that comes around in various parts of Michigan during this season. And it literally does taste like chicken 🍗🍄🤯 .
I lightly dusted each piece of my chicken of the woods with @ottosnaturals ’s cassava flour and @letsdoorganics ’s arrowroot starch and some seasonings such as garlic, onion, applewood smoked salt, smoked paprika, etc. The chicken of the woods were from @argusfarmstop , my go-to for local and wild produce 🍄 .
The local and wild fiddleheads from @argusfarmstop were boiled for 15 mins and sautéed with EVOO and splashed with lemon juice and lemon zest after 🍋 🌱 .
The charred ramps were also courtesy of @argusfarmstop and were local and wild — I just put a dash of salt and pepper on at the end.
The salad was butterhead lettuce with my sweet maple tahini (@soomfoods ) and garlic dressing! 🧄 🥬 - 4 hours ago
A #vegan & #glutenfree take on “chicken piccata” 🍋 I kind of just made up the recipe as I went along haha but it turned out great! 💚•••••••••••••••••••••••••••••••••••••••••••
- @gardein chik’n scallopini - 3 tbsp @bobsredmill GF flour - 1 lemon 🍋 - 2 tbsp capers - 1 cup vegetable broth
- 3 tbsp olive oil - salt 🧂 & pepper
Coat the chik’n in the GF flour and salt & pepper, cook in olive oil on medium high heat for 3 minutes per side (or until golden brown). Remove chik’n & put to the side. Add to the pan: vegetable broth, 3-4 slices of lemon, squeeze the rest of the lemon juice in, and heat for about 2-3 minutes. Then add the chik’n back in and cook for another 5 minutes until the sauce is thickened. 😋 - 4 hours ago
