Bondibaiy, Maldivian (vegan) dessert 🍚 🥥 🌱
Ingredients: 
2 cups rice
2 cups sugar
2 cinnamon sticks 
2 raanba leaves (pandan) 8inch each
1/2 cup coconut milk
Water

Recipe: 
Cook the rice in boiling water with raanba leaves and cinnamon. Add in the sugar once the rice is cooked. Simmer and cook by stirring, till sugar is mixed in nicely.

#savaitgaliodesertas Trupininis pyragas su tofu “varške” 🍊

Žinot, bent jau mane pastaruoju metu Instagramas įkvepia. Noriu kepti cinamonines bandeles, kepti duoną, sėti ir sodinti visokias daržoves, sportuoti, medituoti. Iš visų šitų dalykų tvirtai darau tik vieną - sportuoju, bet sportas visad buvo mano kasdienybės dalis 😜 Kartais medituoju, ir jau planuoju kepti duoną 🤞🏼 Šiuo metu laisvalaikiu veikiu tai, ką man norisi veikti, o ne tai, ką turėčiau veikti, nors ir nesilyginti socialiniuose tinkluose nelengva.

O grįžtant prie įkvėpimo Instagrame - tai šitas pyragas buvo įkvėptas nuostabiosios @amelijak . Ji prieš kelis mėnesius kepė varškės pyragą su klementinais, tai aš privalėjau pamėginti jį veganizuoti. Paauglystėje labai mėgau tokį varškės pyragą! Tai nostalgiškai prisiminiau tą skonį - mano versijos pyragas gavosi drėgnas, su skania trupinine tešla ir apelsinų aromatu 🍊

Beje, šį ir dar kitus receptus galite rasti šio mėnesio žurnalo Raktas numeryje, kur pasidalinau savo receptais Velykoms 🤗

Tešlai reikės:
1 pakelio veganiško sviesto (200g)
1 puodelio šviesių speltos miltų
2/3 puodelio viso grūdo speltos miltų
1 apelsino žievelės
1/3 puodelio rudojo cukraus

Pyrago įdarui:
3 pakelių minkšto (firm) tofu (540 g)
1/2 puodelio natūralaus sojų jogurto
1 apelsino minkštimo
1 banano
1/4 puodelio agavų sirupo
2 šaukštų kukurūzų krakmolo
2 šaukštelių vanilės esencijos

Į virtuvinį kombainą sudedame šaltą, kubeliais supjaustytą sviestą ir visus likusius ingredientus. Viską sumalame iki vientisos masės. Maždaug 2/3 tešlos išklojame kepimo popieriumi išklotos apvalios kepimo skardos dugną, šiek tiek užkeldami kraštelius. Geriausia tą daryti drėgnomis rankomis. Likusią tešlos dalį atidedame į šoną. Įdarui nuo apelsino nuojauname žievelę ir išimame tik minkštą vaisiaus dalį be jokių skūrelių. Visus ingredientus sudedame į virtuvinį kombainą ir sumalame iki vientisos masės. Ją pilame ant pyrago pagrindo. Ant viršaus sutrupiname likusią tešlą. Kepame įkaitintoje 180 laipsnių orkaitėje 50-55 min.

If you don’t have a cupcake tray, roll the mixture up into small balls or bars and cover them with chocolate!

RECIPE:
Base:
1 cup chickpeas
½ cup oats
1 cup Medjool dates
½ cup cashews
¼ cup unsweetened shredded coconut
1 teaspoon vanilla extract

Topping:
90 g dark vegan chocolate
¼ cup non-dairy milk of choice

Instructions:
1. Add the base ingredients to a food processor and process until it becomes one big smoothish ball. It should be a tiny bit tacky but not wet. If it is really wet, add a handful more oats and process again.
2. Remove from the food processor and press the dough into a cupcake tray. Alternatively, you can roll the mixture up into balls and cover them with chocolate.
3. Add the chocolate and the milk to a small pan and over a low heat, allow the chocolate to melt. Stir to help them combine. Once the chocolate is melted completely pour it over the no bake bars.
4. Refrigerate for at least an hour, enjoy!

NORWEGIAN MEASUREMENTS🇳🇴
BASEN:
2,5 dl/ 165 g kikerter
1 dl lettkokte havregryn (spe på med havregryn om deigen blir for klissete)
Ca 2 dl ferske dadler
1 dl cashewnøtter
0,5 dl kokosmasse

90 g mørk melkefri sjokolade

Healthy Apple Crumble, one of my favorite desserts that I can now eat in peace 👀 recipe below 👇🏼
كرامبل التفاح الصحي 👇🏼

Healthy oat apple crumble 
Ingredients: 
1 and a half cups rolled oats
Half cup whole wheat flour
3 TBS maple syrup or honey
2 TBS vegetable or coconut oil
2 and a 1/2 TBS cornstarch
A pinch of nutmeg
2 tsps cinnamon 
7 cups chopped red apples with skin

Preparation: 
Preheat oven to 170 degrees C
Combine oats with flour and 1 tsp cinnamon
Add maple surup/honey and oil to the oats and combine well 
Aside, combine apples with cornstarch, nutmeg and the remaining cinnamon
Spread apples evenly in a baking pan
Top with the oats mix and bake for 40 minutes! 🙌🏼 المكونات: ‎كوب و نصف شوفان مجروش
‎نصف كوب طحين اسمر ‎٣ ملاعق طعام شراب القيقب او العسل

2 INGREDIENTS CHOCOLATE MOUSSE 
This the most simple vegan chocolate mousse you can find, just 2 ingredients and really fast to make 😉 
Just drain a can of chickpeas and keep the chickpea water (aka aquafaba). Weight how much aquafaba you have and weight the same thing in dark chocolate (or any type of vegan chocolate). I personally did 6 pots with 230g of each 😁. You can add a little bit of vinegar (any kind) in your aquafaba to stiff it better, use an electric whisk. When it’s well stiffen melt you chocolate. When it’s melted add a little bit of aquafaba to the chocolate and give it a good whisk (otherwise it could make clumps in the mousse). Gently mix the two together, place in multiple pots or one big and place for at least 2h in the fridge !😊 Then it’s ready to eat!! 😆

No-Bake Breakfast Granola Cups my @elavegan 🌻
Ingredients

Granola cups:

1 1/2 cups (170 g) granola

1/2 cup (70 g) sunflower seeds, chopped (see recipe notes)

2 tbsp (40 g) agave syrup (or maple syrup)

2 heaped tbsp (50 g) sunflower seed butter

Pinch of salt

Filling:

1/4 cup (60 g) sunflower seed butter (melted)

Topping:

1/2 cup (90 g) dairy-free chocolate chips (or dark chocolate, chopped)

Instructions

Watch the video (scroll down a bit) to see all instruction steps.

Combine all ingredients for the granola cups in a mixing bowl and mix well with either a spoon or your hands. The mixture should stick together when you press it between your fingers. If it's not very sticky add a little bit more liquid sweetener.

Grease a cupcake pan or use a silicone mold. This recipe yields 6-8 cups, depending on the size of your cupcake pan.

With the back of a tablespoon, press the mixture firmly into the cupcake pan and make a dent in the middle of each cup.

Put a heaped tsp of sunflower seed butter into the center of each granola cup. Freeze until firm, about 60 minutes.

Melt dairy-free chocolate chips in a water bath (simply put the chocolate chips in a small bowl and place it over hot water). You can accelerate the melting process by adding 1-2 tsp of coconut oil.

Once the chocolate is melted pour it on top of the sunflower seed butter of each granola cup. It will harden quickly because the sunflower seed butter is cold.

Store in the fridge. You can also freeze these breakfast granola cups in zip-lock bags! Enjoy!

With the back of a tablespoon, press the mixture firmly into the cupcake pan and make a dent in the middle of each cup. Put a heaped tsp of sunflower seed butter into the center of each granola cup. Freeze until firm, about 60 minutes. Melt dairy-free chocolate chips in a water bath (simply put the chocolate chips in a small bowl and place it over hot water). You can accelerate the melting process by adding 1-2 tsp of coconut oil. Once the chocolate is melted pour it on top of the sunflower seed butter of each granola cup. It will harden quickly because the sunflower seed butter is cold. Store in the fridge. You can also freeze these breakfast granola cups in zip-lock bags! Chocolate  mousse for the win 🤤 hadn't done this in a while and I'd forgotten how good it is 😍
Instructions: put 1 ripe banana, half avocado, any plantbased milk (I used soy, and for extra creaminess and a more dense texture you could use coconut milk) and 1 tbsp of cacao powder into a blender and blend! It's that easy! As toppings I used raspberries, walnuts and corn flakes 🙌🏻 Have a nice weekend!
