Cauliflower “fried rice” featured on my stories last week with tons of asparagus, mushrooms, peppers, onion, ginger, garlic, and topped with crispy tofu 🍚😋 It’s been a very quiet week and a half on my feed - life has been crazy in some of the best and some of the most stressful ways. But I’ve got some great dishes built up ready to share, and now that I’m done with my 8 week meal plan I’m excited to start experimenting in the kitchen again!

My final thoughts on my experience with the F45 8 week meal plan: 🥗 I feel like I really reset my habits when it comes to food. Portioning and including way more whole foods was a huge part of the challenge and I want to keep up these habits!
🌾 I was gluten free for 8 WHOLE weeks. And while I don’t think I’m gluten intolerant by any means I do think cutting it out was a big contributing factor to me feeling lean and less bloated.
🍻 I also cut out alcohol for the entire 8 weeks! This has left me feeling very clear headed and accomplished. I already only drink in moderation, but it was a good reminder that it’s a nice treat and not a necessity for fun.
🏋️‍♂️ I’ve been crushing 6 workouts a week consistently and don’t see myself changing this anytime soon
💪 I’ve never felt more in shape or happy with how I look/feel. This sounds cheesy but just stating the facts 😝

All this being said, I definitely indulged in some vegan junk food and several glasses of wine over the past few days. But I’m motivated to keep being consistent and mindful going forward!

-gardien holiday roast -tofurky holiday gravy -homemade cranberries: sugar water fresh cranberries -mashed potatoes: original almond milk unsweetened; almond milk yogurt plain; and butter potatoes that don’t have butter in them it’s just their name. -broccoli casserole: broccoli; Daiya cheddar cheese; Ritz crackers; and plant butter

Happy Tofu Tuesday ❤️
This is a very simple and delicious meal.🤗
Very light, yet satisfying 👍
Roast shiitake. 
Steam gyoza, tofu and bok choy. All separately as cooking times will vary. 
Place drained tofu shirataki noodles in bowl add miso broth. Either heat in micro or saucepan. 
Once warm, add toppings of mushrooms, bok choy, gyoza, tofu, basil, ginger, and sweet chili sauce. 😋

Zumba Tuesday was fun as always 💃!!⁣

I love the music, the social aspect, & my awesome instructor! ⁣
⁣
But, If fitness classes were the only workouts I relied on, I’d be in trouble. ⁣
⁣
It’s too easy to miss a live class because: ⁣
⁣
it gets cancelled sometimes⁣
don’t feel like driving ⁣
errands or events after work ⁣
⁣
That’s why I also love my at-home streaming programs as my main workouts so much! ⁣
⁣
There’s a much better chance that I’ll do those 4-5 times a week than the odds of me going to a fitness class that often. ⁣

It’s the best of both worlds! ⁣
