I had the meat and potato pie with peas + gravy 😋
It's all vegan and vegetarian, with a small menu of toasties, crumpets, sandwiches etc, with pasta, pie and curry specials. They also do coffee, delicious cakes and there's a health shop attached to it as well 💚

1/2 cup plant-based milk, or vegetable broth⠀
1 teaspoon salt⠀
1/2 teaspoon pepper⠀
1 pound fettucine, or other pasta of choice⠀
1. Bring a large pot of boiling water to a boil. Add the cauliflower and cook, covered, for 8-10 minutes or until cauliflower is fork tender. Reserve 1 cup of the boiling water.⠀
2. Heat the olive oil a large skillet over medium heat, sauté the minced garlic until soft and fragrant, but not browned, about 1-2 minutes. ⠀
3. Use a slotted spoon to transfer the cooked cauliflower to ablender. Add the sautéed garlic, reserved 1 cup cooking liquid, milk, salt and pepper. Cover the vent in your blender lid with a thin kitchen towel to allow venting and puree until the sauce is smooth and creamy, about 2-3 minutes. If the sauce starts to look dry, add a few drops of water, milk, or olive oil.⠀
4. Serve with cooked fettuccine⠀

4 cups fresh pineapple⠀
1/2 red bell pepper⠀
1/2 jalapeño, deseeded⠀
Handful cilantro⠀
Zest and juice from 1 lime⠀
For the meal prep -⠀
Cooked forbidden rice⠀
Cooked or canned chickpeas⠀
Avocado⠀
Broccoli sprouts⠀
Spinach⠀
Cherry tomatoes⠀
Steps:⠀
1) Mix the coconut aminos, rice vinegar and chili garlic together. Let the tempeh marinate. (You can also marinate the tempeh in just coconut aminos).⠀
2) Place all salsa ingredients in a food processor and process for 10 seconds or until desired consistency. Place in food prep containers.⠀
3) In a nonstick pan over medium heat, cook the tempeh on both sides for 4-5 minutes or until crispy.⠀
4) Place the forbidden rice and tempeh in two food storage containers. Add the rest of the meal prep ingredients. You can add a squeeze of lemon juice to the avocado to prevent browning.⠀
5) When ready to eat, add the salsa to the tempeh and enjoy!⠀

Mouth-watering 🤤🍝🍅😍 Simple tomato pasta!

❤️ Show some love and drop the creator of this awesomeness a like and a follow! • • • • • • 🍅🍅Recipe: Makes enough for 3-4 people
1 small white onion – finely chopped
3 garlic cloves – minced
1 tin of good quality chopped tomatoes or passata
A generous handful of fresh basil leaves – roughly chopped + extra to sprinkle on top
1 tbsp of olive oil for frying
A generous pinch of salt and pepper for seasoning 
For the slow roasted tomatoes:
About 250gr of cherry tomatoes
A generous drizzle of olive oil
Salt and pepper to taste

To serve: your favourite pasta

Slice the tomatoes in halves. Place them on baking tray with the flesh facing upwards. Drizzle with the olive oil and sprinkle with salt and pepper. Place the tray in the oven and slow roast the tomatoes at 150 degrees Celsius for 35-40 minutes. Make sure not to roast the tomatoes at higher temperature otherwise they will end up looking like a tomato sauce, you want to cook them slowly at a low temperatures they will keep their shape, almost like sundried tomatoes.

In the meantime make the tomato sauce. Add the oil to a large pan. Once hot add in the chopped onion. Let the onion sauté for about 5 minutes until it starts to caramelise and going slightly brown. Add in the crushed garlic and keep cooking for another minute. 
Add in the chopped tomatoes and mix everything together. Turn the heat down to a simmer, cover with a lid and let the sauce cook for 20-25 minutes. You can also have it as it is without blending,  Add in the chopped basil and cook for another minute. 
While the sauce cook also cook your favourite pasta according to the packet instructions.

Drain the pasta and add it to the pan with the tomato sauce. Sprinkle with the fresh basil leaves and top it with the slow roasted cherry tomatoes.

And just like that our 3 month trip to the English countryside has come to an end💔

Thank you so so much to all my family and friends that have absolutely showered me and my beautiful boys with so much love and affection. It was exactly what we needed❤️ Elijah is leaving here with the best memories - ice skating, tobogganing, walks in the woods, exploring caves, archery, water slides, bowling, cinema trips (the list goes on!)....but the the thing he said was his “favourite ever” was crawling into bed for snuggles with his Nana and Grandad each morning and my Mum reading him books and stroking his face as he fell asleep each night. The bond they share is truly special and something he’ll treasure forever💜 The “mum guilt” is overwhelming today🙁 It’s so hard having my heart in two places so very different and so very far apart💔

Wish me luck on the 24 hour journey back to Australia with a 4 year old and 7 month old😳😱 Oh and let’s not forget my crippling fear of flying🤦‍♀️😂 @spencerguyweddings we’ll see you soon(ish!)😘
