I have been getting a few questions about what it’s like being a traveller during what looks to be a pandemic. Mostly, it’s business as usual but some things are different... and yes my plans have changed for the rest of 2020.

PS: I have N95, surgical and cotton face shields. This is just one of the shitty masks I was given for free while all masks were sold out and two local people were diagnosed with COVID19 soon after I arrived. I’m taking the recommended precautions and am healthy, safe and well.

I am now in Penang and am not currently traveling solo.

PPS: The food in Penang is ah-mah-zing!

Officially the oddest meal but just what I wanted. Peanut butter on tiger bread toast (@pipandnut on one, sunpat on t'other), some grapes cos health & a handful of fries knicked off the lad. Prob not tempting anyone into veganism here, but I'll take peanut butter over steak anyday ta.

Tofu Teriyaki Stir Fry by @riseshinecook 🧡 .

Recipe:⠀
Ingredients⠀
1 cup dry brown rice ⠀
1 (12-14 oz) extra firm tofu ⠀
1 small red onion, sliced ⠀
6 ounces mushroom, thinly sliced⠀
1 red bell pepper, thinly sliced ⠀
3 cups bite-sized broccoli florets⠀
Garnish: sesame seeds, sliced green onion, matchstick carrots ⠀
⠀
Teriyaki Sauce⠀
2 garlic cloves, minced ⠀
2 teaspoons ginger juice ⠀
1/3 cup low-sodium tamari ⠀
2 tablespoon brown rice vinegar ⠀
1 tablespoon maple syrup or agave, optional⠀
1 teaspoon vinegar-based hot sauce ⠀
1 tablespoon arrowroot starch ⠀
1 cup of water⠀
⠀
Instructions⠀
First, cook the rice according to directions and press the tofu (drain the tofu, wrap it in a clean dish towel and lay something heavy on it for 15-20 minutes to remove extra water). Line a large baking sheet with parchment paper and preheat the oven to 375ºF.⠀
Meanwhile, prepare the vegetables and add all the Teriyaki Sauce ingredients to a bowl, whisk together. Place the sauce in the fridge until needed. ⠀
After pressing the tofu, cut it into ¾ inch cubes. Spread the tofu out on the parchment-lined pan and drizzle with a little tamari. Bake for 40 minutes, gently flipping halfway through for even cooking⠀
When the rice and tofu are almost done, start sautéing the veggies. Add the red onion, mushrooms, and red pepper to a wide sauté pan or medium sized pot and sauté over medium/high heat with a few tablespoons of water for 5 to 7 minutes, stirring frequently, until the onion starts to soften and mushrooms begin to brown. Add water as needed to prevent burning. ⠀
Now remove the sauce from the fridge, whisk together again so all the arrowroot starch is dissolved and then add this to the pan along with the broccoli. Stir and cover the pan/pot. Bring the sauce to a simmer over medium heat and simmer for 5 to 7 minutes, covered, or until the sauce thickens and the broccoli is bright green and tender. Stir occasionally to prevent sticking Divide the rice between bowls and layer with teriyaki veggies and baked tofu. Garnish with sesame seeds, sliced green onion, and carrots. ⠀

Red Curry with Roasted Vegetables and Chickpeas
Ingredients:
• 1 head of cauliflower cut into florets
• 1 cup red bell pepper chopped
• 1 cup french green beans chopped
• 1 1/2 cups red onion sliced
• 2 Tbsp each finely chopped garlic, ginger, shallots
• 4 Tbsp red curry paste
• 1 cup chopped cilantro leaves
• 1 can chickpeas drained
• 1 can coconut milk
• olive oil
• almond oil
.
Method:
• preheat oven to 400f
• roast cauliflower on a sheet pan with a splash of olive oil and a pinch of salt and pepper for 25 minutes tossing halfway
• at the same time roast the red onion in a baking dish with a drizzle of olive oil and sprinkle of salt and pepper for 20 minutes tossing at the halfway point
• roast the peppers and green beans on a baking sheet with a pinch of salt for 8-10 minutes
• set aside the roasted veggies
• in a large sauté pan heat the curry paste in a few Tbsp almond oil on low for a few minutes
• add in the garlic, ginger, and shallots and continue to simmer on low for 10 minutes
• add all of the roasted vegetables and stir to coat
• add chickpeas and coconut milk and simmer until everything is warmed through
• add cilantro leaves and remove from heat
• serve over rice and garnish with a few cilantro leaves
• enjoy 😉

🍓 Berry Smoothie Tarts 🍓 
This beautiful weather is making me crave sweet and cold treats.....and this surly is satisfying my cravings 💛 here’s what you’ll need : 
Bases : 5 coconut spice truffles 
Filling : Banana, strawberries & blackberries 
Form the base by pressing down the truffles into the tart mould. If you don’t have a mould, use a normal tray. Blend all the fruit ( banana is used to make it more creamy ). Pour the smoothie into the mould and freeze for 1.5 hours. I added some crushed nuts, chai seeds and coconuts as toppings 🥳 ENJOY !

​Peanut Tempeh
1 block tempeh, cut into cubes
1/2 cup veggie broth
1 tbsp soy sauce or tamari
1/2 inch fresh ginger minced
Peanut Sauce (3 tbsp peanut butter, juice of 1 lime, 2 tsp garlic chili sauce, 1 tbsp soy sauce, 2 tsp maple syrup, 1/4 cup water)

In a small bowl, whisk together ingredients for peanut sauce. Feel free to adjust thickness to your preference. Place a pan on the stove over low medium heat. Add veggie broth, tempeh, ginger and soy sauce. Allow broth to come to a simmer, making sure to flip tempeh after 4 minutes to simmer on the other side. Allow tempeh to absorb the veggie broth completely. I show this method of cooking in my stories.

If you have a non stick pan then add half the peanut sauce to the pan with the tempeh and toss together. Allow to cook over low medium heat to cook evenly on all sides. You should see edges start to brown. .

🌱Puerto Rican style beans loaded sweet potatoes🌱 I originally made these beans with sazon seasoning but I wanted to give you guys a different way of making them with spices you likely already have. They are really delicious. (For less spice, use half the chili pepper.).....
🌱Recipe: ✅Sauté 1 small chopped onion (small dice) in some olive oil (or water) until translucent, about 3-5 minutes. ✅Add 3 minced cloves, 1 minced deseeded Cubanelle pepper (or Anaheim) and cook another 30 seconds. ✅Add 1/4 tsp onion powder, 1/2 tsp oregano, 1/2 tsp turmeric, 3/4 tsp garlic powder, 3/4 tsp cumin, 3/4 tsp coriander, 1 bay leaf and sauté another 30 seconds, adding more olive oil (or water) as needed. ✅Add 1-15oz can pink or kidney beans with liquid, 3/4 cup water, 2 tbsp tomato paste, 1/2 cup can tomatoes and 1/2 tsp maple. ✅Stir to incorporate and simmer 15 minutes. ✅Top with chopped cilantro.

💚1 pimiento rojo asado
💚3 tazas de frijol en bola, tibios y sin caldo
💚2 ajos medianos picados
💚1/2 cdta.. Pimienta cayena
💚1cdta. Comino en polvo
💚1 cdta. Sal de mar
💚1/2 taza de pan molido o avena molida

⬇️ Preparación ⬇️
✅ Enciende el horno a 200 °C

✅ Pon todo en en procesador de alimentos, si no tienes, puedes aplanar los frijoles a mano y después agregar todo lo demás y revolver

✅ Con una taza agarra masita y sírvela en una charola para hornear engrasada, dale forma de carnita

✅ Rocía aceite de coco en spray encima o con tus manos con aceite dales una pasadita cómo si les estuvieras untando crema corporal 😁

✅ Hornea por 20 minutos, voltéalas y hornea 10min. mas y listo!!

Serví dos carnitas sobre pan tostado y encima puse aguacate y tomate, un poco de catsup, mostaza y listo!! Unas papas o camotes horneados, una ensalada fresca y listo!! A disfrutar una hamburguesa alta en proteína!!
