Choc Mint Mousse Cups
(Makes 3)
.
400ml coconut cream
90g vegan Mint Chocolate pieces 
1 Tbsp cacao powder 
1 Tbsp cornflour
1 Tbsp sweetener (xylitol, stevia/erythritol blend, sugar, rice malt, 6 stevia drops) 
1/4 tsp vanilla extract
Add coconut cream, cacao powder, sweetener and cornflour to a saucepan and whisk until blended
Heat over medium, whisking regularly for 3-5mins until smooth and thickened.
Remove from heat and add the chocolate and vanilla. Stir until melted and smooth
Pour into serving glasses
Place in the fridge for 30mins or overnight to chill and set.
Top with choc curls, fresh mint leaves and cacao nibs if desired

Hummus⠀

1 tin chickpeas⠀
1/8 cup aquafaba (liquid from the tin of chickpeas)⠀
1/4 cup
100% Italian extra virgin olive oil⠀
1 tbsp tahini⠀
1 tsp cumin seeds⠀
2 cloves garlic⠀
1 lemon, juiced⠀
1/2 tsp sea salt⠀

Tomato Bruschetta⠀
.⠀
4 slices sourdough⠀
1 clove garlic⠀
1 cup cherry tomatoes, halved⠀
small bunch basil, chopped⠀
2 tbsp
100% Italian extra virgin olive oil⠀
pinch sea salt⠀

Add cherry tomatoes, basil, olive oil and sea salt to a small bowl. Stir well and allow to marinade for 10 mins. ⠀
Add all hummus ingredients to a food processor and blitz until smooth. Taste and adjust as required, adding more lemon juice or salt as needed. Toast or grill sourdough and rub with the clove of garlic.Top with hummus and marinated tomatoes. .⠀

Brownie Rezept 🌱❤
Zutaten:
2 EL gemahlene Leinsamen
6 EL heißes Wasser
175g vegane Butter (Pflanzenmargarine) oder Kokosöl
250g Zucker
1 TL Vanilleextrakt
150g Mehl
75g Kakaopulver
1 TL Backpulver
1/2 TL Salz
ca. 80ml Schoko-Soja Drink
Zartbitter Schoko-Drops
(Menge nach Belieben)

Zubereitung:
1. Zuerst die Leinsamen mit dem heißen Wasser verrühren und etwa 5 Minuten quellen lassen.
2. Den Ofen auf 175°C Ober-und Unterhitze vorheizen. Eine Backform mit etwas Margarine einfetten und dann zusätzlich mit Backpapier auslegen. (Das Einfetten sorgt dafür, dass das Backpapier besser an der Form haftet.)
3. Die vegane Butter (bzw. Margarine) langsam in einem Topf schmelzen. Zucker und Vanille hinzufügen und gut verrühren. 
4. Mehl, Kakao, Backpulver und Salz in eine große Schüssel geben und vermischen. Die flüssige Buttermischung, pflanzliche Milch und Leinsamen hinzugeben und alles zu einem homogenen Teig verrühren (aber nicht zu lange rühren). Zuletzt die halbe Menge der Schoko- Drops unterrühren. 
5. Den Teig in die vorbereitete Backform füllen und glatt streichen. Mit den restlichen Schoko-Drops bestreuen und ca. 30 Minuten backen oder bis zur gewünschten Konsistenz. (Je länger man die Brownies backt umso trockener werden sie.)
6. Anschließend die Brownies 15 Minuten abkühlen lassen. Dann mithilfe des Backpapiers aus der Form heben und weitere 10 Minuten abkühlen lassen. 
7. Brownies schneiden und genießen ❤

Recipe:
Dill Avocado Dressing
1/2 a ripe avocado
3-4 sprigs fresh dill
Juice of half a small lime
2 tsp apple cider vinegar
1/2 tsp garlic powder
2 tsp liquid sweetener of choice
Pinch of salt
1/4 cup water
.
Combine all ingredients in a small blender and blend until creamy. Add a little more water if sauce is too thick for your liking. Added a little of the dressing to my kale, and then topped over the completed bowl.

🌱❤🌱'MEAT BALLS'🌱❤🌱Vegan meat balls from @iglo_deutschland with courgettes, kohlrabi, sweetheart cabbage and fennel in mustard & cream sauce. 
For the vegetables:
1 fennel 
1 small courgette
1 small kohlrabi 
1/2 head of sweetheart cabbage 
Method:
Cut everything in medium sized chunks and sauté the vegetables one after the other in a large pan.

For the sauce:
1 tsp mustard 
1 tsp salt
1 tsp garlic powder 
1 tsp ground black pepper 
1 tbsp mixed herbs 
1 pack soy cream 
4 tbsp vegan parmesan 
Method:
Add everything to the vegetables, give it a good stir and let it simmer until the sauce thickens. 
Serve it with the pan fried 'meat balls' and garnish it with some fresh basil.

1 tbsp neutral oil (optional)
2 avocados
1/2 lemon , juiced
pinch sea salt
2 green onions
2 cups white beans

Signature Citrus Tahini Dressing
2 tbsp tahini
1/2 lemon , juiced
pinch sea salt
water , to thin (I used about 2 tbsp)

1. Turn oven to 400F/200C. Using a fork, poke small holes in sweet potatoes going all the way round, about 1-inch apart. Line baking tray with parchment paper, and place sweet potatoes on top. Optional to paint with neutral oil (for crispier skin). Bake for 40 minutes, or until cooked through.
2. Mash avocado in a bowl with lemon juice and a pinch of sea salt. Finely chop green onion.
3. To make the citrus tahini dressing: combine tahini, lemon juice and a pinch sea salt in a bowl. Mix together to combine, then add splashes of water until you've reached desired consistency, (I used about 2 tbsp).
4. Cut sweet potatoes in half and fill with white beans, and mashed avocado. Sprinkle with green onion, and drizzle with citrus tahini dressing.

Ingredients:
~ 1 cup of glutinous rice, soaked overnight, drained
~ 1/4 cup of chopped carrots
~ 1/4 cup of chopped mushrooms (use low moisture content like Shiitake)
~ 1/4 cup frozen peas
~ 2 tbsp grated ginger
~ 2 tbsp dark soy sauce
~ 2 tbsp soy sauce
~ salt and white pepper
~ 1-2 cups of veggie stock - separated
~ sesame oil
~ dumpling wrapper
In a heated pan with 2 tbsp sesame oil, sauté ginger and carrots until soft, add mushrooms and rice. Stir in all sauces and 1/2 cup of stock, let simmer for 5 mins.
It's best to steam the rice in a steamer until cook but if you are in a time crunch like me, cook them in a rice cooker with the remaining stock, start with 1 cup. If you see some uncooked grain, add the remaining stock.
No pleating on this, simply put 1 tbsp of rice mixture in the middle of dumpling wrapper and seal like pictured. Add a pea on top and steam on high heat for 10 mins. Serve warm with your favorite sauces (hoisin, chili)
*If you make a big batch, you may freeze these after sealing them. Just steam without thawing and they taste just as great!🤩

3/4 package udon noodles, cooked according to package

1 tsp avocado oil
1/2 onion finely chopped
1.5 bell peppers chopped

Whisk together the sauce in bowl:
1/4 cup tamari
1/4 tsp ground ginger
1 tsp garlic powder
1/2 tablespoon pure cane sugar
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
1 tsp sriracha
Cornstarch slurry: 1 tsp cornstarch + 2 tsp water

Garnish: lots of cilantro, red chili flakes, lime juice

In a large pan, add oil over medium heat. Add onions, cook 5 minutes to soften. Add bell peppers and cook another 3 to 5 minutes until crisp-tender. Push vegetables to the side and add sauce to pan, and let gently bubble to thicken for 1 to 2 minutes. Stir with vegetables and add in noodles, toss to coat noodles in sauce. Serve with garnishes. .

- 1/2 cup of museli ⁣
- 1 tbsp black sesame powder⁣
- 1 tbsp chia seeds⁣
- 1 1/2 tsp matcha powder ⁣
- soy milk ⁣
- 1 banana ⁣
- topping ideas: hemp seeds, flax seeds, goji berries, cacao nibs, fruit! ⁣

1. mix the museli with sesame powder, matcha powder and chia seed in a bowl ⁣
2. mash half a banana and add to the mix ⁣
3. pour enough soy milk to cover everything and mix thoroughly ⁣
4. place mixture in the fridge overnight or for 30 minutes ⁣
5. take out the oats and give it a stir, adding maple syrup/sweetener if needed 
6. add your toppings and enjoy!

Dzień dobry 😊 Good morning 😊Już tyle rzeczy napisano  o narodowej kwarantannie, w ciągu ostatnich tygodni, że każde zdanie, które tutaj zostawiam będzie banałem. Ja jestem w grupie tych, którzy nie mogą tego czasu poświęcić na samorozwój, kreację lub przyjemną nudę z Netfilxem. Szczerze mówiąc ledwo wyrabiam się z obowiązkami związanymi z pracą, domem i nauczaniem zdalnym. Do tej pory obejrzała „Hackera” i przeczytałam dwie książki. Dużo gotuję, ale wcale nie prosto i bardzo oszczędnie, raczej jak na zdjęciu 😉 I dużo piekę, na zdjęciu jest reprezentacja moich wypieków. Po prostu dobrze planujemy posiłki i raz na tydzień robiony duże zakupy, które wyjadamy w zależności od trwałości produktu. Pomagała nam w tym tradycyjna lodówka na balkonie, teraz będzie trudniej. Dzięki temu, że jestem w domu nic się nie marnuje, robię np. z pozostałości po obiedzie drugie śniadanie,  czy na podwieczorek mogę użyć resztek warzyw do sałatki. I tyję. Na balkonie zorganizowaliśmy sobie punkt ładowania słońcem. Wspieram lokale sklepy, jak mogę, nawet kwiaty i ziemię kupuję na bazarze, zamawiam rzeczy w plastyku z podaniem torby przez uchylone drzwi. Nie są to niezbędne potrzeby, ale ryzyko zakażenia na świeżym powietrzu, z utrzymaniem odpowiedniej odległości, i jeśli ktoś na nas nie kichnie, jest na prawdę  bliskie zeru. Wychodzę z domu raz na tydzień i maksymalizuję zakupy. Robimy też zakupy moim rodzicom. Czasami czuję się psychicznie paskudnie, czasami cudownie. Tęsknię szalenie za córką, która zawieźliśmy do dziadków na dwa tygodnie, z których zaraz zrobi się cztery. Musimy ją przywieźć, tylko że teraz ma duże podwórko, trawę, piaskownicę, huśtawkę i swój ukochany garaż, gdzie majsterkuje z dziadkiem. Jest jej tam bardzo dobrze, tylko przed spaniem pamięta, że ma matkę 😂A tutaj?  I tyle wieści ze starej codzienności w nowym wydaniu. Do usłyszenia 😊

Lemon Bread with a lemon glaze 💚

Ingredients

2 cups flour 
1 1/2 tsp baking powder

3/4 tsp salt

1/4 tsp baking soda

1 cup sugar

3/4 cup milk of choice

1/2 cup plain yogurt, such as coconut milk yogurt

1/4 cup applesauce 
1/4 cup lemon juice

zest of 1 large or 2 small lemons (1 tbsp total)

1 tsp pure vanilla extract

Preheat oven to 350 F. Grease a 9x5 loaf pan. In a large bowl, combine all dry ingredients. Whisk liquid ingredients in a separate bowl, combine wet and dry, then stir until just evenly mixed. Spread into the pan. Bake 50-55 minutes, or until loaf has risen and a toothpick inserted into the center comes out clean. If desired glaze with 1 cup powdered sugar combined with 1 tbsp milk of choice and 1 teaspoon lemon extract. Mix well and pour over the top of bread. .
