Recipe (yields 2-3 servings)
~ 2-3 servings rice noodles, cooked based on package's instructions
~ your favorite greens (used spinach)
~ 16oz firm tofu - pressed & mashed
~ 1/4 cup finely chopped mushrooms - sautéed & seasoned with salt
~ 3 tablespoons finely chopped carrots
~ 1/2 teaspoon salt & a few shakes of white pepper
~ 1/2 teaspoon corn starch
~ oil for cooking & toasted sesame oil
~ 3 cups veggie stock/no chicken broth
~ 1 teaspoon fried shallots
~ a drizzle of toasted sesame oil, white pepper & salt to taste
~ chili oil with sediment
✅To make the tofu balls, place mashed tofu in a cheesecloth bag. Wring out as much liquid as possible. To check, you should be able to mold tofu into balls easily. ✅Transfer mashed tofu into a bowl, then add in carrot, mushrooms, salt, a few shakes of white pepper, a drizzle of toasted sesame oil & cornstarch. Mix ingredients until all incorporated.
✅Take about 1 tablespoon of mixture & roll into a ball (made about 20 balls), then brush it with oil. Preheat air fryer at 390F for 3 mins. When ready, brush the air fryer rack with oil & place in the tofu balls (I did mine in 2 batches). Air fry for 5 mins until lightly brown with a shake in between.
✅To make the broth, place veggie stock, fried shallots in a pot, then bring to boil. Season with salt, white pepper & a drizzle of toasted sesame oil. Add in cooked noodles & spinach, then continue to cook until spinach is slightly wilted.
✅Finally, add in tofu balls & a swirl of chili oil with the sediment before serving.
