Ah, the perennial question of what should I eat for lunch?🧐🧐🧐 Finally @hellofresh is providing a solution #notsponsored . All my roommates are trying hello fresh, so I thought I’d give it a chance. I ordered a 3 meal box and picked my pick my meals a week ahead. Compared to omnivore meals, vegetarian meals are rather limited (4 meals out of ~20 are vegetarian), and this week there wasn’t a purely vegan option. I went ahead and ordered three vegetarian options.
This sweet potato fajita tacos meal was labeled “hall of fame”and I can definitely see why. The recipe was super simple — the only special spice in addition to salt and pepper was the southwest spice blend. All the produce came in the box, along with a sheet of pictured instructions on how to turn the produce into a delicious meal. After 35 minutes of chopping veggies and mixing them together a splendid plate of vegan tacos 🌮 appeared!!! The flavor combination was A+ — the full bodiness of roasted sweet potatoes contrasting the refreshing salsa with squeezes of lime — 😋 so yum!
I also learned some neat cooking tips such as marinating the jalapeño with lime juice, salt and sugar to release and mellow the flavor of the hot pepper.
