50 ml seed oil, for frying

For the sauce

1 tablespoon(s) olive oil
1 onion, medium
1 tablespoon(s) tomato paste
2 bay leaves
250 ml water
1 VEGETABLES bouillon cube
400 g canned tomatoes
1  teaspoon(s) granulated sugar
1 stick(s) cinnamon

Basmati Rice

250 g basmati rice
500 g water

Oggi è la giornata mondiale della pizza, e ovviamente non può mancare nemmeno in un'alimentazione plant based 😍
La pizza marinara d'altronde è una di quelle preparazioni tradizionali che nasce 100% vegetale, preparata per la prima volta nel 1734 prevede semplicemente pomodoro, aglio, olio ed origano.
Nella sua semplicità è sempre stata la mia pizza preferita, anche prima di diventare vegan.

Ingredients (~12 cookies)
2 1/4 cup flour
1 tsp salt
1 tsp baking soda
2 tsp cornstarch
3/4 cup vegan margarine (from a tub, not the sticks)
1/4 cup nondairy milk (like almond or soy)
1 cup brown sugar
1/4 cup sugar
2 tsp vanilla extract
1 1/2 cup mini vegan chocolate chips

Directions:
Preheat the oven to 350°F.
Line two baking sheets with parchment paper. In a small mixing bowl, whisk the flour, salt, baking soda, and cornstarch.
In a larger mixing bowl, add the margarine, milk, sugars, and vanilla. Beat with an electric mixer. Add ~half of the flour mixture to the wet mixture and use a rubber scraper to combine. Add the rest and mix until combined. Fold in the chocolate chips.
Using a large scooper, place balls of dough on your baking sheet. Bake for 11-13 minutes, until they are baked to your liking (smaller cookies should be baked for 9-11 minutes).

INGREDIENTS:
Tofu Fingers: 1 Block firm tofu approx 14oz 
Breadcrumb Mixture: •1 cup panko breadcrumbs 2 tbsp neutral oil • 1 tsp paprika • 1/2 tsp sea salt • 1/2 tsp ground black pepper • 1 tbsp nutritional yeast flakes optional Coating • 1/2 cup cornstarch • 1 cup non-dairy milk • 1 tsp apple cider vinegar optional 
BBQ Sauce (optional): •1/3 tsp prepared BBQ sauce or another spicy sauce • 2 tbsp neutral oil or melted vegan butter

INSTRUCTIONS: 
1.Cut tofu into 5-6 slices. Wrap in kitchen paper or a clean kitchen towel (*as pictured in the step-by-step pics in my blog post) to press out the liquid. Place a heavy pan or another weight on top, and set aside for half an hour (or overnight) until the tofu is very dry and looks dense.then, cut the tofu slices into fingers. 
2.Preheat your oven to 395 °F (200 °C). 3.Now take 3 bowls. In one bowl, combine all ingredients for the breadcrumb mixture. In another bowl,add the cornstarch.In the third bowl,stir together the non-dairy milk and apple cider vinegar. 
4.Take one tofu finger at a time,toss into the cornstarch first,then dip into the non-dairy milk.Repeat this step (put back into the cornstarch,then into the non-dairy milk),and finally coat with the breadcrumb mixture. 
5.Repeat with all the tofu fingers,placing them on a lightly greased baking sheet in a single layer.Spray with a little cooking oil for more crispness,if desired. Bake for about 30-40 minutes,flipping them halfway through baking. 
6.Optional step: Stir together BBQ sauce with oil. Remove tofu from the oven and brush with BBQ oil mixture.Place back in the ovenand contin e bakinn for another 5 minutes, or until crispy! 
7.Serve with herb dip or another favorite dip and enjoy! .

INGREDIENTS: Tofu Fingers: 1 Block firm tofu approx 14oz Breadcrumb Mixture: •1 cup panko breadcrumbs 2 tbsp neutral oil • 1 tsp paprika • 1/2 tsp sea salt • 1/2 tsp ground black pepper • 1 tbsp nutritional yeast flakes optional Coating • 1/2 cup cornstarch • 1 cup non-dairy milk • 1 tsp apple cider vinegar optional BBQ Sauce (optional): •1/3 tsp prepared BBQ sauce or another spicy sauce • 2 tbsp neutral oil or melted vegan butter . INSTRUCTIONS: 1.Cut tofu into 5-6 slices. Wrap in kitchen paper or a clean kitchen towel (*as pictured in the step-by-step pics in my blog post) to press out the liquid. Place a heavy pan or another weight on top, and set aside for half an hour (or overnight) until the tofu is very dry and looks dense.then, cut the tofu slices into fingers. 2.Preheat your oven to 395 °F (200 °C). 3.Now take 3 bowls. In one bowl, combine all ingredients for the breadcrumb mixture. In another bowl,add the cornstarch.In the third bowl,stir together the non-dairy milk and apple cider vinegar. 4.Take one tofu finger at a time,toss into the cornstarch first,then dip into the non-dairy milk.Repeat this step (put back into the cornstarch,then into the non-dairy milk),and finally coat with the breadcrumb mixture. 5.Repeat with all the tofu fingers,placing them on a lightly greased baking sheet in a single layer.Spray with a little cooking oil for more crispness,if desired. Bake for about 30-40 minutes,flipping them halfway through baking. 6.Optional step: Stir together BBQ sauce with oil. Ingredients:⠀
- 6 small eggplants⠀
- 20-30 green beans⠀
- 3 portobello mushrooms⠀
- 1 handful fresh cilantro⠀
- 1 can of coconut milk⠀
- 2 tbsp Tom Kaa paste⠀
- 1/2 onion (optional)⠀
- 2 cloves of garlic⠀
- 1 red chili⠀
- 2 tbsp coconut oil⠀
- 2 cloves of clove⠀
- 3 pods of cardamom⠀
- 1/2 tsp cumin⠀
- 2 tbsp turmeric⠀
- approx. 1 pint of boiling water⠀
- Garnish: chili flakes & fresh basil⠀

Heat oil, add onion and garlic. After a minute, add half the water and dissolve the Tom Kaa paste. Ground-up the spices, slice the veggies and the cilantro. Add everything to the pot and bring to a boil. Let simmer for 10-15 minutes, adding the rest of the water for consistency. ⠀
