Another healthy very easy recipe. Roasted aubergine and chickpeas with harissa topped with a lot of goodness. Have a look below for the recipe and topping ingredients!

Ingredients:
-1 aubergine per person
-2 tea spoon of harissa -80g  of butter -4 table spoons of Greece yoghurt -1 big clove of garlic -coriander -Dukkha
-Virgin olive oil -Salt / pepper
.
Steps:
1-Heat the oven to 200C/190C fan/gas 6. 2-Pierce the aubergines a few times with a knife,and brush them with olive oil . Roast for about 40-45 mins, or until the aubergines are tender. 
3-while the aubergine are roasting you can prepare the toppings.:
##Crush the garlic and mix it with the Greek yogurt. 
##Chop the coriander. 
##Melt the butter and add the harissa to it
4-The chickpeas only take 20 minutes to roast in the oven. You can add them on the aubergine’s side after 20 minutes. Just make sure they are dry and brush them with olive oil. 
5- once the aubergine are ready open them in two
6-brush both the inside of the aubergine and the roasted chickpeas with the harissa and butter mix and add salt and pepper. Put them onto a plate
7-Spoon some of the yogurt and garlic into each aubergine slice then scatter the coriander and dukkha

Today is officially cucumber day🥒
There are still farms in Korea right in the middle of the city where you can go and buy fresh vegetables. The taste of cucumbers is very good, children said it is much better, than in supermarket.😊 Thus we bought around 30🥒

Сегодня у нас огуречный день🥒 В Корее до сих пор сохранились мини фермы, где можно купить овощи с грядки, прямо в городе. Мы долго ходили мимо, а сегодня решили зайти и попробовать.  Огурцы оказались настолько вкусными и сочными, что дети чуть ли не передрались за то, кому кусать)))) Хозяева, милые бабушка с дедушкой, показали нам парник, рассказали как растят огурцы, а в подарок еще и помидор с грядки подарили😊 В~общем, всем любителям огурцов~ рекомендую👌 .
Стоит наш мешок огурцов около 10 долларов, а лежит в нем штук 30, не меньше)

Lunch was a no tomato , sweet potato based chilli containing kidney beans, Berlotti beans, roasted red peppers, sweetcorn, red onion and fresh chillis. Carb loading some of my favorite comfort foods ( cornbread is the best comfort food, crunchy and soft and buttery all at the same time 😍) and taking advantage of fresh veggies 🌽 🥔
- I used Martha White self rising cornbread and cooked it according to package directions. I do not add sugar to my cornbread, sugar is for corn muffins, which are very different from cornbread 👍
-bring a large pot of salted water to a boil over high heat. Cook 4 Ears of sweet corn for 5 minutes ( or until done) in boiling water. Remove with tongs and set aside to cool.
- add 5 to 6 cups halved small red potatoes to water. Cook for 5 to 7 minutes, or until fork tender ( fork can easily be put into potato) and drain.
- cut corn kernels from ears. Combine corn kernels, warm potatoes, and 1 can drained and rinsed black eyed peas ( I used Glory brand Simply Seasoned because it has a great smoky flavor) with 2 tablespoons butter, 1 tablespoon olive oil, and 1 teaspoon seasoned salt ( add more if needed) and pepper.
- Roasted Okra ( SO Delicious!)- preheat oven to 400 degrees. Line a rimmed baking sheet with aluminum foil. Halve 1 pound okra pods lengthwise ( smaller@pods are more tender). Drizzle with  1 1/2 tablespoons olive oil. Seasons with salt and pepper. Cook for 12 to 15 minutes or until pods are tender and lightly browned.

A different dosa from the regular ones.Try out the Maggie Dosa which is worth its taste 🤤.
Maggie Dosa ~~~~~Maggie Mania Recipe 10~~~~~ Ingredients:
1.Maggie and Maggie masala - 1 whole pack 
2.Water - 1 1/2 cups
3.Vegetable as required (I used red,green capsicum and onion)
4.Wheat flour - 1/2 cup 
5.Salt as per the taste 
6.Chilli powder as required
7.Butter to make dosas 
Procedure:
1.Cook Maggie using 1 1/2 cups water and Maggie masala
2.In a bowl, mix cooked Maggie, wheat flour (atta),salt, chilli powder, vegetables(optional) in to a thick dosa batter(add water if required)
*Note : Do not mash the Maggie.
3.Heat the pan and grease it with butter.Pour the Maggie - Wheat batter and spread it as a dosa (utappam to be specific)
*Note :Do not spread it too thin.It would be a difficult task to flip the dosa.
4.Flip the dosa and cook well on both sides till it is golden brown in color
5.Serve hot with some ketchup😋

Tasty Maggie dosa is ready in minutes.Enjoy it in breakfast or as evening snack 🤩
