By now you probably already know that I am a big fan of Asian food. This one is actually an inspiration from a recipe by @umamigirl and modified using some indian ingredients. It turned out delicious and is definitely an add on to my regular weeknight dinners! Here’s how it’s made -

#recipe for Stir Fry Veggies with Crispy Tofu 🥬 In a bowl, take 1/4 cup roasted sooji (cracked wheat)/cornflour, 1 tbsp salt, 1 tbsp black pepper and 2 tbsp of garlic olive oil. Mix it well so it forms a semi dry powder. 🥬Add 1 tsp black sesame seeds and about 10 oz. extra firm tofu cut into cubes. 🥬 Mix gently so the tofu gets well coated. 🥬 In a non stick pan, add 1 tbsp of sesame oil and add the coated tofu. Shallow fry well until the tofu is crispy from all sides. Set aside. 🥬 In the same pan, add some more sesame oil and add roughly chopped mushroom, red bell peppers and onions. Sauté until the mushrooms are cooked and the peppers are slightly soft. 🥬 In another bowl, mix together 2 tbsp of schezwan sauce, 2 tbsp of soy sauce and 1 tbsp of chili vinegar. 🥬 Now add in about 2 cups of roughly chopped cabbage to the sautéed mushrooms and add the sauce mix. 🥬 Mix in 1 cup of vegetable broth and let the veggies simmer for a while until the cabbage is cooked. 🥬 Once cooled add in 1 cup of roughly chopped bokchoy leaves and about 2 finely chopped scallions. 🥬 Add some salt and cook until the broth dries up a little. Turn off the heat. 🥬 In a serving plate, layout the veggies and add the crispy fried tofu on top with a garnish of cilantro. 🥬 Serve with rice/quinoa or just enjoy by itself! .

Spaghetti Bolognese is a favourite in most households and whilst I do enjoy it - it can get a little boring. So instead of serving it with pasta I turned it into Shepard’s pie 😋😋 mash potato on the top straight under the grill for 10 mins on high and that’s it!!!! Hubby is on dinner duty tonight.⁣

He was an amazing cook when we first met and made me the most delicious meals (honey, soy and ginger scallops, homemade wonton soup etc etc)....I on the other hand couldn't even cut up a chicken breast to save my life.⁣

I have put him back on duty one night a week and tonight he is whipping up some Chicken Teriyaki Skewers on the BBQ. It is freezing and pouring rain here so we are calling it an Irish BBQ (throwback to my childhood.)⁣

Top it with fresh scallion, pair with duck sausage with a garden green salad dressed with a sesame rice wine vinaigrette perked up with a dash of sumac. #farmtotable #urbanfarmer #mushroomfarmer #weeknightdinner #burntrice

All you need is:

1lb Chicken Breast
.

1 .7oz Packet Italian Dressing Seasoning .

Salt .

Pepper .

1/2 cup Melted Butter .

3 Potatoes Sliced
.

Asparagus

Directions:
.

Pre-heat oven to 400 degrees.
.

Place chicken breasts on Sheetpan.
.

Scatter potatoes onto the Sheetpan.
.

Smother chicken & potatoes in butter.
.

Sprinkle with salt & pepper to taste.
.

Place in oven for 45 minutes.
.

Remove from oven.
.

Place asparagus onto the Sheetpan.
.

Smother in butter & sprinkle packet of Italian seasoning.
.

Place back in the oven for 8-10 minutes.
.

Serve & enjoy. .

TEN MINUTE MEAL: LIGHTENED UP CAESAR PASTA SALAD! Ok so I have made multiple versions of a Caesar dressing/sauce. Pasta has been in rotation a few times a week lately, because it’s delicious, but also you can make a box and keep in the fridge to add to salads, make a quick meal with and alternate the flavors. I topped this off with some soft boiled eggs for some protein. You can easily make this dairy-free by using dairy free alternatives. Happy Today all. •

Deets: gluten free penne tossed with this dressing/sauce, avocado chunks, tomatoes, steamed spinach and 6.5 minute soft boiled eggs. 
SAUCE: 1/2 cup plain Greek style yogurt (use dairy free if needed), 1 tablespoon olive oil, 1 tablespoon sour cream (use dairy free if needed), 1 tablespoon lemon juice, 1/2 teaspoon salt, 1/4 teaspoon pepper, 2 tablespoon grated Parmesan (dairy free if needed), 2 tablespoon water, 1 teaspoon garlic granules (or minced garlic), 2 teaspoon coconut aminos. Post quarantine weeknight meals:  although GA is lifting some quarantine restrictions,  the enjoyable family dinners continue.  To balance the cooking we are teaching the kids to help and cook one meal a week.

1) Roasted Pork Tenderloin with Fig Port Wine sauce, roasted purple cauliflower and cornbread stuffing.  This takes a little longer than 30 min but the meal is comforting and rich.

2) Yakatori Chicken with grilled ginger honey soy zucchini and rice.  I read that the charcoal makes the difference. 
3) Taco buffet.  Family made this fantastic meal which satisfies all members.  From tacos, to burritos and taco salad, its a 'have it your way' evening.

4) Fresh pina colada (virgin for the kids) with ripe pineapples.  Very satisfying Friday.

Simple classic! Have uploaded this dish before but thought I would do this a bit different! “Bangers & Mash🥔” Always a great dinner idea! Get yourself some lovely butcher sausages, some maris piper potatoes. Made a great bacon and beef gravy added so much flavour! 🧀Grate parmesan, add milk and butter to the mashed potatoes with some black pepper and salt!
