😋😋 KETO SALMON WITH PESTO AND SPINACH 😋😋
How much do you love both peato and salmon? If the answer is “more than fretty much anything in the word.” Then this is the recipe for you! 
Bonus: It’s fast, keto, and gorgeous. What more can you want?
➖➖➖➖➖➖➖➖➖➖➖➖
✅ INGREDIENTS ✅
- 1 - 1/2 lbs salmon
- 1 cup mayonnaise or sour cream
- 1 tbsp green pesto or red pesto
- 2 oz. parmesan cheese, grated
- 1 lb fresh spinach
- 1 oz. butter or olive oil
- salt and pepper
➖➖➖➖➖➖➖➖➖➖➖➖
✅ INSTRUCTIONS ✅
1️⃣ Preheat the oven to 400°F (200°C)
.
2️⃣ Grease a baking dish with half of the butter or oil. Salt and pepper the salmon fillets and place them in the prepared baking dish, skin-side down.
.
3️⃣ Mix mayonnaise, pesto and parmesan cheese and spread over the salmon.
.
4️⃣ Bake for 15-20 minutes, or until the salmon is done and flakes easily with a fork.
.
5️⃣ Meanwhile, sauté the spinach in remainning butter or oil until it’s wilted, about 2 minutes. Season with salt and pepper.

6️⃣ Serve immediately with the oven-baked salmon.

👉 Dairy free? No problem! For a dairy-free dish, skip the parmesan and sour cream, and fry the spinach in olive oil instead of butter. Also, remember that green pesto usually contains parmesan, so reach for some red pesto instead.

🍒 We all have cravings, and we all are allowed to step off track once in a while. But does it mean we can allow ourselves to eat whatever we feel like, just because we did the work?  We go to the gym every day, so we can fuel with junk food in the evening? Does being active balance out the unhealthy eating habits? Not quite. 
As much as I endorse "real-food-eating", and having a snack (even if it's unhealthy), once in a while, there is a fine line between "reasonable" eating, and between rewarding yourself with food for all the hardwork you've done at the gym. And here's why: 🍒 Even if you don't really care about gaining or losing weight, the way your body feels inside is very often different from the way it looks on the outside. 
Don't be blinded by good physique, whether is you or someone you admire. Good looking body does not always equal healthy body. Someone might be showing off the six pack, or big biceps, but at the same time might suffer from eating disorder, or nutrient deficiencies. 🍒 If you really want to look good, from the inside out;
- do your health checks on regular basis; - eat less processed food, and plenty of colorful veggies and fruits;
- eat well 80% of the time, leave the 20% for all the "cheat snacks";
- remember that psychology plays super important role in weight loss/gain. If you're stressed, because you can't have your favorite products, you will struggle to lose weight, no matter how perfect your diet is;
- don't reward yourself with food, if you want to have that cookie, eat it, even if you didn't workout; just make sure you have it under control, and you eat the "junk" in moderation, and minority 🍒 ..and if you work your ass off, but eat low quality foods and "cheat" every time you get the chance, please don't blame your trainer, coach/instructor for the lack of progress ;)

Part 3 of my journey with my body and food over the past 2 decades...

Otherwise known as the maintenance years. Sounds boring, right?

Actually, I think it was the period of my life that taught me the most.
⠀⠀⠀⠀⠀⠀⠀
After losing a significant amount of body fat I felt good in my own skin again. But I was TERRIFIED of letting things slip again.
⠀⠀⠀⠀⠀⠀⠀
So terrified that I became fixated on all the wrong things. The number on the scale, hitting the right macros, never missing a training session.
⠀⠀⠀⠀⠀⠀⠀
I am going to be painfully honest now, because I think it’s so easy to look at moments posted on Instagram and think other people have it nailed...
⠀⠀⠀⠀⠀⠀⠀
I did not have it nailed. I remember social occasions or going to friends’ houses and being gripped with fear in advance about what I might have to eat and whether I would be able to track it accurately.
⠀⠀⠀⠀⠀⠀⠀
It got so bad, I even remember fishing packets out of people’s bins to scan them into my fitness pal. This is not normal behaviour 🤦🏻‍♀️
⠀⠀⠀⠀⠀⠀⠀
The most I ever gained and lost over a period of 3 years was 3kg (pictured). It crept on gradually, not really because of a change in diet or training; it was the set point where my body was happier being.

But I couldn’t bear the number on the scale creeping up. So I dieted to get that number back where I thought it should be ⚖️
⠀⠀⠀⠀⠀⠀⠀
Looking back now I would honestly question if it was really worth it for the difference between these images 🤷🏻‍♀️
⠀⠀⠀⠀⠀⠀⠀
And that was my life for about three years. Constantly striving to maintain a specific scale weight and dress size.
⠀⠀⠀⠀⠀⠀⠀
If I’m honest, it got exhausting. It impacted my relationships and it didn’t really make me happy.

On the brighter side, those years taught me that once you learn the basic principles of nutrition you will not lose them and become a whale overnight 😂

You have the knowledge and the power to choose how you want to live your life.

I like to think that now I am taking forward the best things these years taught me, and very very gradually moving away from the not so great parts.

DAY 100 -09/04/2020 .
Ok, so now our wedding has had to be moved back by a whole year, I've kinda relaxed on the diet for now!! That and the fact that chocolate is currently getting me through the lockdown 😂 .
I haven’t given up on working out though, this is one thing I will not do!! It’s good for the body but most importantly, it’s good for the mind 💪🏻 .
