I’ve come to the realization that all my meals need to be super easy for me to stick to them. Life is just weird right now and I need to reduce some of the pressure I’m putting on myself, so I’m going to work on keeping meals easy (but still healthy). You will notice below that easy is the theme this week!
*This Week's Meal Plan*
Monday - Chicken Quesadillas - Tonight we are making chicken quesadillas for dinner. Just chicken, cheese, and tortillas (plus guac and sour cream for serving).
Tuesday - Turkey Taco Salad - We have a head of romaine we need to use up, so tomorrow we are going to have taco salads made with ground turkey instead of beef.
Wednesday - Chicken & Gravy - One of my all-time favorite pressure cooker recipes! This meal is delicious served over mashed potatoes. Complete comfort food!
Thursday - Noodle Caboodle - This is a family favorite. It is a little more work than the others, but totally worth it (and still relatively simple overall). We use lean ground beef, but you can sub with turkey for lower points. I’ve posted this recipe before, so if you don’t want to wait for me to post it this week, just scroll a little ways and you should be able to find it. 😊
Friday - Date Night - Hubby and I are in need of a date night, even if it has to be a date night in. We are going to put the kiddos to bed early (or try anyway), cook up some ribeyes that have been sitting in our freezer, and hopefully between now and then I’ll come up with something more original than just watching a movie. Any ideas?
Saturday - Grilled Cheese & Soup - This is an easy standby because the kids love it and I can make it low points with a few basic swaps. There’s a good chance we will be eating A LOT of grilled cheese over the coming months.
Sunday - Easter - I’m going to be honest, I have no clue what we are going to do for Easter dinner. We normally spend it with family, but since we are quarantined Hubby and I are trying to come up with our own Pearson Thanksgiving hotdog tradition. If you’re a fan of This Is Us, you’ll hopefully know what I’m talking about. Again, creative ideas are welcome!
