Ingredients

1️⃣ 4 boneless, skinless chicken breast halves

2️⃣ 1/2 cup pesto sauce

3️⃣ 1/2 lb. sliced white mushrooms

4️⃣ 4 slices low-fat provolone cheese, cut in half

Instructions
Preheat oven to 350 degrees F. Pound the chicken breasts out to 1/4 inch thickness.

Spread 1/4 cup of the pesto sauce evenly over the chicken breasts.

Coarsely chop the mushrooms. Top each chicken breast with the chopped mushrooms and half a slice of cheese.

Roll up the chicken from the short side and secure with toothpicks. Place seam side down in a baking pan.

Cover the pan with foil and bake for 25-30 minutes or until the chicken is cooked through.

Preheat the broiler. To chicken with remaining pesto and cheese. Broil until the cheese is melted, about 3-5 minutes. Discard toothpicks and serve.

getting in the Christmas spirit with this tasty tomato soup! 🍅🎄topped with my favorite air fryer parmesan chickpeas! recipe for both below ❤️💚
⠀⠀⠀⠀⠀⠀⠀⠀
Instant Pot Healthy Tomato Soup 
Ingredients:
1 tbsp olive oil
2 tbsp ghee
5 garlic cloves, minced
1 c chopped onion
4 cans (14.5 oz) diced tomatoes with juice
4 c vegetable broth
2 tsp Italian seasonings
2 tbsp fresh basil, chopped
1/4 tsp red pepper flakes (optional)
Salt & pepper, to taste
Directions:
1. Add olive oil, ghee, and onion to instant pot. Press sauté mode and cook until onion is translucent/little brown, about 5-7 min
2. Add garlic and stir constantly for about 30 seconds
3. Add everything else (tomatoes, broth, seasoning, basil, red pepper flakes, salt, pepper) and stir
4. Cancel sauté mode. Close lid and secure. Turn steam knob to sealing position. Press pressure cook for 5 minutes
5. When cooking done, let instant pot naturally release pressure for 15 min. Then turn steam knob to venting position.
6. Use an immersion blender to make the soup creamy. Or transfer to a blender in batches carefully. 
7. Top with crunchy Parmesan chickpeas

Tal’s Crunchy Parmesan Chickpeas
Ingredients:
2 cans chickpeas
2 tbsp olive oil
1 tsp dried oregano
1 tsp garlic powder
1/4 cup finely grated Parmesan cheese
Salt & pepper, to taste
Directions:
1. rinse & pat dry chickpeas
2. toss with olive oil, dried oregano, garlic powder, salt, pepper, Parmesan cheese
3. air fry at 390 degrees F for 20 min, shaking every 5-7 min

They would marinate the steak in lime to help tenderize the tough meat. The fajita is now created using many types of meat (numerous cuts of beef, chicken, even shrimp). It is grilled and served with onions and bell peppers on a tortilla, sometimes with many additional condiments. In restaurants, it is often served in a sizzling skillet. Mexican “Arracheras” are very similar to fajitas, also using marinated skirt steaks.

Okay sooo mini golden doodles aren’t totally allergy friendly..I have a headache and my throat hurts 🤦‍♀️ sooo hopefully getting some Claritin soon and praying it helps 🙏 he’s also a baby having deterrent 🙅‍♀️ he has to eat every 2-3 hrs and go outside. Kill me lol good thing he’s cute 😅 easy dinner. Trying to save money to breaking our whatever is in the pantry for a while.  This was a hit! Craig has I both loved it! Not paleo but #healtyfood -

Add to foiled baking sheet with onions (I did that for craig) and bake at 425 for 15. Remove onions and bake for 10 more min. Add to rice and beans + salsa + avocado 🥑 + garlic salt. -
