I always keep frozen pierogi in my freezer because they are so easy to base a meal off of. Boil them up for a couple of minutes and then pan fry quickly in some ghee of butter until crisp. Cook up some sausages and fry up some eggs to pair with the pierogies and you have one delicious breakfast or dinner platter :

Black Diamond apples are a rare variety from the family of Hua Niu apples (also known as the Chinese Red Delicious). The name is a little misleading because they aren't exactly black, but rather a dark hue of purple.

The unique apples owe their color to their native geography in Nyingchi, a small city in the mountains of Tibet, where they receive a lot of ultraviolet light during the day but the temperature fluctuates dramatically at night, causing the skin to develop a deep, dark color. The flesh inside is white and bright like any other apple.

Black Diamond apples are produced within a very limited window and are usually available for just two months each year. In China, they are only sold in high-end supermarkets (usually in gift boxes). And while an individual apple starts around $7, some can be as pricey as $20 each!

STRAWBERRY & CREAM OATS 🍓

Pink oats? Yes please 🙋🏼‍♀️ this is a great way to use up some of those strawberries that are starting to turn on you (which was my case) or just a fun way to switch up your typical oatmeal. Insanely creamy and, well, pretty 🤩

INGREDIENTS (Single serving):
1/2 cup Non-Dairy Milk (can use dairy if desired)
~3/4 cup Fresh or Frozen Strawberries
1/2 cup Quick or Rolled Oats
1/2 tsp Vanilla Extract
Squeeze of Maple Syrup, plus more to taste
Pinch of Salt

DIRECTIONS:
1. Cut the tops off of HALF of the Strawberries and place them in a blender with the Milk. Blend until smooth and creamy, around 15-20 seconds. Dice the remaining Strawberries and set aside.
2. Add Oats to a pot with the Strawberry Milk, Vanilla, Maple Syrup, and a pinch of Salt. Bring to a simmer over Medium heat.
3. Once the mixture starts to bubble, stir the remaining Strawberries into the Oatmeal (but save a few to put on top!) 4. Let simmer over medium heat for 5-10 minutes or until your desired thickness is reached. Stir frequently – this helps to make everything more creamy!
5. Transfer the Oatmeal to serving bowls and top as desired.
YUM, ENJOY!

What a cool day it is today here in Lagos. I apologise for taking so long to start my reviews 🙏, so many things to put in place.

The first page I'll be reviewing is @thefoodmarket.ng(as spelt with the full stop). Don't get it wrong because there's a similar page with thesame name. I've made that mistake before. 
This is for those resident in Lagos. She specialises in market runs. You know this corona period that everyone is trying to stay safe and all, especially those with babies, pregnant, too busy to restock, with health issues or just don't want to step out of the house, she'll do all the running around. 
I once bought some shrimps, tilapia and snails and they were just the way I'd get them myself. What I really liked was how clean the snails were. She took off that stress of removing the shells and even freezing so everything got to me still fresh despite the distance they had to come.
*Delivery Service: Quick (my order arrived the day she said it would)
*Customer Services: Amazing (she even called to ask what I thought about what she got. Not like those that will deliver and silence! )

Fluffy buttermilk pancakes 🥞 made with my homemade buttermilk and butter 😍 homemade butter is amaaaaazing + so easy 🙌🏼

HOMEMADE BUTTER 🧈: pour 1 or 2 cartons of 35% cream in your stand mixer. Beat until the cream goes from whip cream to butter. The butter will start separating from the buttermilk. This will take a few minutes. You can also use a hand mixer but it will take longer. Enjoy✨ #butterfordays

I honestly cannot think of anything better than fruit! It’s a feast for all your senses. Perfect nutrition packaged in vibrant colours and heavenly sweet scents. 
There’s a reason we all have a sweet tooth - we were simply designed to eat this Devine food! You will soon realise this is the truth when you try it. The benefits of a high fruit diet are almost endless. After just a few days I already noticed so much more clarity and heightened senses. I’ve always had senses better than the average person, especially hearing, but when eating fruits I notice a major improvement in all of my other senses as well! I can focus and concentrate better, I have more energy, and better stamina.

MEATLESS SCALLOPS + CAULIFLOWER RISOTTO🍄🍚 okay, I know these look like bananas😂 BUT they are actually the stems of king oyster mushrooms, which have a mild taste and look and feel just like scallops! I found them at @asiapacificgreenville

This meal was SO satisfying and filling and easy! It’s vegan, GF, and less than 300 calories, too! • i n g r e d i e n t s :
• king oyster mushrooms (check your local Asian grocery if you have a hard time finding them!)
• 1 bag frozen cauliflower rice
• 1/2 cup frozen peas
• about 1/2 container of sliced white mushrooms
• 1 cup of @elmhurst1925 cashew milk
• 1-2 scoops @foragerproject dairy free sour cream
• 1 scoop miso paste (optional)
.
• d e t a i l s :
• cut the mushroom stems into 1/2 inch-1/4 inch thick slices
• score the tops and soak in warm water, salt, and coconut aminos for 30 minutes-4 hours
• in a pan, sautée the sliced white mushrooms with onion and garlic (optional)
• once sautéed, add the cauliflower rice and combine
• slowly add the cashew milk and stir
• when almost done, add frozen peas and scoop of sour cream and miso paste. Combine.
• in a separate pan, on high heat, sear the mushroom scallops until brown and crispy
• enjoy!😋

MEATLESS SCALLOPS + CAULIFLOWER RISOTTO🍄🍚 okay, I know these look like bananas😂 BUT they are actually the stems of king oyster mushrooms, which have a mild taste and look and feel just like scallops! I found them at @asiapacificgreenville • This meal was SO satisfying and filling and easy! It’s vegan, GF, and less than 300 calories, too! • i n g r e d i e n t s : • king oyster mushrooms (check your local Asian grocery if you have a hard time finding them!) • 1 bag frozen cauliflower rice • 1/2 cup frozen peas • about 1/2 container of sliced white mushrooms • 1 cup of @elmhurst1925 cashew milk • 1-2 scoops @foragerproject dairy free sour cream • 1 scoop miso paste (optional) . • d e t a i l s : • cut the mushroom stems into 1/2 inch-1/4 inch thick slices • score the tops and soak in warm water, salt, and coconut aminos for 30 minutes-4 hours • in a pan, sautée the sliced white mushrooms with onion and garlic (optional) • once sautéed, add the cauliflower rice and combine • slowly add the cashew milk and stir • when almost done, add frozen peas and scoop of sour cream and miso paste. I love good food. Like... love it. ⁣

Food = connection for me. It’s as much about the coming together as it is about the eating. ⁣

Nothing makes me feel like I’m killing it as a mom more than when I have a fridge and pantry stocked with my kids’ faves or when I cook the meals they love and sit down and enjoy it together. ⁣

If I’m going to make healthier choices... I can’t sacrifice that. I won’t. ⁣
⁣
So... I’m on a mission to find good recipes that use real food that we’ll all love. Say you’ll come with me. I’ll need reinforcements. I’m not 100% giving up my comfort foods and cheese dip. But I’d like to find a better balance and make a new habits while I’m off work this summer. ⁣

Today's haul from sprouts. I definitely went overboard here. All the produce was organic, on sale or cheaper than most stores so I got everything else grass fed and pasturer raised Everything was fresher. Avocados were perfect instead of hard or about to rot. I don't think I'm going to go anywhere else from now on. Getting back on track here. I just lost 20 lbs the first two weeks after my birthday eating super strict but I fucked around and gained at least a third of it back since . This is more balanced. All whole foods. Not going to fall back off the wagon this time. Been making progress this year but too much up and down instead of consistency letting all this other stuff going on get in my head. Going to start posting more on here and staying off Facebook for the most part except for a couple groups that are positive towards this and other goals I'll be working on
