The flavor profile in this recipe is similar to a Margherita pizza with a little extra oomph. Throwing bruschetta and pizza into one delicious bite, let me tell you—it’s fabulous. •

I’m all about quick and easy dinners during the week & I made this pizza with a fresh dough ball from a local Italian store and whipped up the homemade pizza sauce in under 3 mins. 
Making your own sauce is really simple and I like that I can control how much sugar is added.  I used Hunts Heirloom Crushed Tomatoes and simply added a few seasonings! Happy Thursday everyone!! Recipe is below 👇🏻 Ingredients
* (1) 28 ounce can of crushed tomatoes (or 2 14 oz cans)
* 2 teaspoons dried basil
* 1 tsp sugar * 1/2 tsp onion powder
* 2 tsp oregano
* 1 tsp paprika
* 2 tsp garlic salt
* 1/2 tsp pepper

Instructions
1. Pour the crushed tomatoes in a bowl.
2. Add in the seasonings and stir to combine.
3. It is officially ready to spoon onto your homemade pizza! It really is that easy!
4. This makes the equivalent to 2 jars of pizza sauce. Just freeze the left overs in baggies or in plastic containers.

Arroz branco ou arroz integral? 
Apesar da maioria das pessoas preferirem o arroz branco o arroz integral seria o mais saudável por diversas razões. O arroz branco por ser refinado nada mas é do que carboidrato vazio, ou seja sem nenhum nutriente. Eu tenho que ser sincera que tentei uma série de vezes trocar o branco pelo integral só porque todos diziam ser melhor mas não conseguia me adaptar até que aprendi o porque ele é melhor para nossa saúde. Tentei algumas marcas diferentes até que finalmente descobri a que mais me agradou. Bom! as razões são muitas e vale a pena se queremos aproveitar o máximo de nutrientes que este alimento tem para oferecer. Porém antes de descrever as razões porque você deve comer arroz integral quero deixar uma dica para você: ao prepara-lo é mais recomendável que você o coloque de molho por algumas horas antes de refoga-lo, quando lembro já encima da hora de cozinhar deixo pelo menos 40 minutos de molho mas é preferível pelo menos 4 horas antes. Por ser integral ele ainda não foi refinado então isso significa que está em sua mais pura forma. Ao deixá-lo de molho na água ele solta o acido chamado (physic acid) que se for ingerido não fará mal à saúde mas ele inibe a absorção dos nutrientes. 
1- O arroz integral é um alimento recomendado para todos aqueles que querem emagrecer com saúde e qualidade de vida.
2- O arroz integral é bom para o sistema cardiovascular
3- O arroz integral é bom para o cérebro
4- O arroz integral é rico em fibra que não só regulariza o intestino mas também não permite picos de insulina como o arroz branco
5- O arroz integral é bom para os músculos 
6- O arroz integral apresenta nutrientes e substâncias com importante atividade antioxidante, o que ajuda a prevenir o estresse oxidativo, que, por sua vez, pode provocar mutações no DNA que levam ao surgimento de câncer.

Garlic Herb Salmon Bowls 🥑🐟🍅 If you're a Salmon Lover, then you gotta try this marinade! We were licking our Bowls with this one!

These are GREAT for a quick dinner idea...but equally GREAT to pack up for your Food Prep this week!

makes 4 servings

Ingredients:
4 (4-5 oz.) skinless salmon fillets
4 cloves fresh garlic, minced
1 tsp dried basil
1 tsp dried oregano
juice AND zest of 1 lime
2 Tbsps raw honey
1 Tbsp olive oil
sea salt and fresh ground black pepper, to taste

FOR THE BOWLS:
2 cups cooked quinoa or brown rice
1 large ripe avocado
2 cups quartered cherry tomatoes
1-2 jalapeno peppers, sliced
3 green onions, sliced
lots of fresh lime wedges

Instructions:

Place all of your salmon fillets in a ziploc bag or sealable container with the minced garlic, basil, oregano, lime juice + zest, honey and olive oil. Season with sea salt and pepper, then seal the bag and toss gently to coat really well. 
Allow this to marinate in your refrigerator for 30 minutes up to an hour.

Meanwhile, cook the quinoa/brown rice and prepare your veggies for the bowls.

Heat a large skillet over medium heat, and drizzle/spray with a bit of avocado oil, or olive oil. Add salmon and cook for 3-4 minutes per side, or until golden and flaky. Cooking time depends on the thickness of your fillets.

To assemble your bowls, divide the quinoa/rice equally among 4 bowls or meal prep containers.

Top each with garlic herb salmon, mashed avocado or sliced avocado, cherry tomatoes, jalapeño, and green onions. 
Squeeze lots of fresh lime over your avocado to keep it green and fresh especially if you're storing these for meal prep to eat at a later time.

Before eating, squeeze everything with lime juice and season with sea salt and pepper to taste. 
These stay great for 3 days refrigerated and sealed well.

Ingredients

180g Udon Noodles 
2 Cups Eggplant (cubed)
1 Onion (diced large)
1 Zucchini (diced)
3 Cups English Spinach leaves
1 Tbsp Olive oil 
2 Tbsp of water (for cooking)
¼ Cup + 1 Tbsp Fermented Black bean and Garlic Paste (more for extra flavor) 
2-1/2 Cups Water 
2-1/2 Tbsp Corn flour (more for thicker consistence) 
½ Tsp Black Pepper

Directions

1. In a large pan on medium high add half the olive oil. Add the black bean paste and stir for about 3 minutes. Set aside in a bowl.

2. Add the rest of the oil into the same pan then add the eggplant and onion and cook for 3 minutes, then add the zucchini and cook for another 3 minutes.

3. Add the black bean paste back into the pan and stir it into the veggies. Add the spinach, black pepper and combine well.  Add 2-1/2 cups of water and mix everything well. Cover with a lid and let it simmer for 10 minutes.

4. Cook the noodle as per package directions. Rinse under cool water and set aside.

5. In a small bowl combine the flour with 1/3 Cup of water. Add to the pan and combine well for 2 minutes until its starts to thicken.

6. Add the noodles to the pan and continue to mix until you get your desired consistency.

7. Garnish with fresh chili.

Add the rest of the oil into the same pan then add the eggplant and onion and cook for 3 minutes, then add the zucchini and cook for another 3 minutes. 3. Add the black bean paste back into the pan and stir it into the veggies. Add the spinach, black pepper and combine well.  Add 2-1/2 cups of water and mix everything well. Cover with a lid and let it simmer for 10 minutes. 4. Cook the noodle as per package directions. Rinse under cool water and set aside. 5. In a small bowl combine the flour with 1/3 Cup of water. Add to the pan and combine well for 2 minutes until its starts to thicken. 6. Add the noodles to the pan and continue to mix until you get your desired consistency. 7.
